Lentil soup simmering nicely in SC using stock from yesterday's small gammon pieces (sliced and frozen in 'sandwich portion' sized packets)

Just finished the leek and turkey pie that Jamie did last week - used turkey left overs brought back from mums - she was going to throw it away  and some of the gammon pieces that were too tender to slice thinly enough

LOL! Dad didn't carve the turkey very efficiently and after boiling for stock there was loaaaads of meat there still. I picked it off (650g!) as mum couldn't be bothered. She said well it will go in the soup(60g? Hellooooo!). I said that there was enough for a pie, so she has given me the bigger 'half'. Putting that much in the soup would be tantamount to throwing it away...it's made us another meal.

  • Purpleivy - will that be okay? As I wasn't sure this year with leftover turkey. If it's been roasted, then re-heated by boiling for stock, then cook it in a pie, isn't that heating it a third time and supposed to be a no-no or am I confused? Is that just if you re-freeze it? Gah it's complicated!

I would like to join in too if I may as I have loads of food left and I really need to empty the freezer so I can defrost it. I made ham and lentil soup today which has gone in he freezer and am boiling the turkey carcase as we speak. I think there will be enough meat in there to make a pie with some of it. Sliced the rest fo the beef up today, covered it with leftover gravy and that is in the freezer as well. The rest of the gammon I am going to use for quiches tomorrow. The freezer is now fuller than it was before!!!!! Today for breakfast we had sliced gammon and fried eggs with bread and butter. Dinner tonight was beef, turkey, sprouts, carrots, peas and gravy. All leftovers except the peas. Had sherry trifle for pudding made from storecupboard and freezer stocks.

I'm usually very careful about the reheating thing, but I figure when it's boiled long and hard as it is with stock, then cooled quickly and refrigerated, Pie will of course be piping. I don't think it's a problem.

My MIL used to leave the turkey out overnight if it wasn't stripped so it would fit in the fridge    and once the stock was made, that pan was left out as well    Needless to say I became very keen on 'helping in the kitchen' and getting that turkey stripped the first day.

Made the turkey pie for dinner tonight and the rest of the turkey and stock is in the freezer. Also made a quiche with the remains of the gammon and that will go in the freezer as well. The remaining pastry was filled with some leftover mincemeat to save wasting it. I have plenty of potatoes for a few weeks and enough veg in the freezer for the rest fo the week. Had fruit juice and egg sandwiches for breakfast today so will need eggs and bread tomorrow. I ought to do an inventory of the freezer but its so stuffed I can't face it. Maybe tomorrow.

  • Tonight we will be having lamb curry - the lamb is the remains of a joint from a few weekends back which has been in the freezer. I'll also be using a tin of coconut milk from the cupboard, some lentils from the larder, plus the last yellow pepper from the bottom of the fridge. Oh, and probably some of my frozenlemon grass from the freezer too - I bought a bunch of the stuff at the chinese supermarket earlier in the year - about ten stalks for something silly like 80p - been working my way through it since! Pudding will be rice pudding with fruit - rhubarb from the freezer and the milk for the pudding was a pint of semi skimmed I rescued from the office fridge before we turned it off on Wednesday! It's a "No Spend Dinner!" :T

Mmmmm we had turkey pie too, made with the onion sauce from last night. Remembered to use the oven bit of the combi instead of putting the big oven on. They loved it!

  • I've got some grapes (2 bags) which I bought a couple of days before christmas and put them in the cupboard as it was the coldest place.. but whoops... forgot about them   They are still edible however appear to have gained a blackish tinge -- I had one and they haven't gone sour yet!!

What can I do to use them up? Is there a recipe where I can then freeze it, or could I just freeze them now and use them later....

Any help grapefully received :rotfl: :rotfl:
  • I have a feeling Jamie Oliver has said something about just popping grapes in the freezer - I seem to recall they go sort of "sorbet-ish" and can be eaten straight from the freezer as they are.

Try googling "Jamie Oliver grapes" and see what pops up! ;)
