    And to continue trying to eat all this up: I'm finishing off last night's curry for lunch (working at home today), and for dinner we are having a bacon & leek & cheese quiche with tenderstem broccoli, that will use some bacon cubes, the manky leeks, the end of some cheddar, a pastry case, some of the eggs, the cream, and the broccoli that I will forget about if I'm not careful.

    ah bless you all but although it seems a lot i will not be eating it in one go just to get through it.. I have posted here what i did with a load of stuff the other day just to let you know...

    :rotfl: Well ive just sat down from 8am this morning.. and i'm so pleased with myself !!! I think i can seriously see my halo tonight..

    This morning i woke up.. Sorted DD out and whilst she played with her new toys i made a pot of pasta sauce and froze both portions for me and DH. (used half a pack of small mince instead of a large pack in one go for one meal !!!)

    I made a pot of ham, mushroom, parmesan and cream sauce for pasta enough for dinner and for Dh to take to work ( used up some grated parmesan in the fridge and used up half the packet of opened turkey ham (hubby muslim doesn't eat pork).

    Then made a pot of savourty mince and put half in the fridge for us for this week and half went into the freezer. and finally made a massive pot of curry.. Cooked a load of pilau rice and potted it up into 6 large individual portions for hubby to take to work with him..

    I also made dinner for tonight which was roast chicken. Peeled all the potatoes from the potato box which were starting to look a bit manky and then mashed the potatoes and mixed with parmesan cheese, salt pepper and the other half of the turkey ham box cut into small pieces.. I then made them into small risoles.. Finally made a salad with one tomato, small piece of cucumber, half a red onion, half an avocado and a snip of celery.. I usually make twice the amount and throw it all out but tonight we finished it all off and hubby was very complementary about dinner and his curries !!!:rotfl:


    So there it is.. Im not sure if i have the courage to venture to the bottom of the garden in these arctic temperatures to haul out frozen food.. So pleased about the beef though it was the buy it for half prize in Mr S last week and hubby cut the pieces into 3 or 4 just enough for a dinner size portion.. he he..

  • Turkey & Bacon Cassorole Packed with Veg

    Diced Turkey (Frozen & Reduced) -Defrost in Microwave for a Few Mins and Fry in Frying pan. till Slightly Brown.

    Fry Bacon Grill Sliced up

    Frozen Veg Boiled in Saucepan and add all these to SlowCooker

    Add all Contents to SlowCooker with a Few Scoops of Gravy Granuals, And Bit of Garlic and Ginger and leave to Cook a few hours...

    Serve with Instant Mash lol

    We had some Left over and I've put it in a Tub to Freeze and Warm up for another Meal.

  • Sorted my freezers and larder out last weekend and have a list of the contents stuck up in my kitchen.

    Found enough bread and sliced quorn for sandwiches all week which uses up the salad in the fridge.

    Jacket potato and cheese with salad on Monday night

    Veg curry, rice and nan bread last night (lots of portions of this as I made in bulk before Xmas)

    Home made parsnip and apple soup with home made bread tonight.

    Left over pasta tomorrow night.

    Vegetable tart and veggies on Friday night.

    Will need to shop on Saturday but just for some bread making ingredients and some cat food and fresh veg/salad.

    My recipe for stew/curry is here.

    In my pressure cooker I half fill it with water, add 1 veggie stock cube, some seasoning, some parsley and thyme and a handfull each of lentils and split peas (my mum also adds pearl barley).

    Then I add veg as follows:

    2 onions
    2-3 carrots
    2 parsnips
    1 swede
    1 turnip
    1 leek
    2-3 sticks celery
    1 butter nut squash
    1 sweet potato

    All cut up into small cubes.

    Once the pressure is up this takes 7 minutes to cook.

    This makes a great stew which I use for 2-3 meals.

    I then add a jar/tin of curry sauce mix and hey presto, veggie curry!

    I cook a large batch of rice with some cinnamon sticks, cloves and a small amount of turmeric and some naan bread from the bread machine and this makes about 8-10 meals for me.

    Very low fat - very cheap - very filling.

    I just did a list of meals from my stocks and came up with 73, without buying anything other than a few veggies. About half of them were vegetarian. That's nearly 8 weeks of food. I think what I need to do is have little or no meat 3 nights a week, while I work through the stocks. I'll restock a bit, but see if I can avoid a big shop until March. I'm planning to start a vege box, get cheese at the market, so it ought to be possible to do a fortnightly supermarket order rather than weekly.

    Catwoman Kent and Scouser Wench- those recipes sound lovely!

    I have stocked up for a siege and i know I have more than enough food in for about 2-3 weeks. The hardest bit more me is just not popping to Mr S or T to see what there is. I DON'T NEED ANYTHING!!!

    This is a hard habit to break for me, even when I know I can manage and don't need anything apart from milk. I think I will get this from the local shop to stop feeling tempted at the weekend as I'm going through it at a rate of knots using up hot chocolate!

    I have just done a stocktake of my cupboards/fridge/freezer...have the following going out of date soon and I'm not sure to what to do with it all...

    4 eggs ood tomorrow
    a frozen cod portion (poss been in more than 3 mths, will it be any good?)
    8 chicken stock cubes (don't like soup and have found one recipe having trawled through this site!)
    loads of nearly or already ood herbs and spices
    big lump of marzipan (not ood yet but need inspiration!)
    2 tubs Nesquik powder
    lime juice
    chopped mixed peel
    glace cherries
    hundreds and thousands!
    microwave butter popcorn
    cranberry sauce
    tiny bit lard
    tiny bit brown sauce

    I have lots of other bits and pieces including lots of froz chicken...

    I love the sound of this one , will have to join in , I always have odd bits left in my cupboard atleast once a week as i hate food shopping , so there ha sto be very little in tomake me go the supermarket . I also can never come up with any ideas of whaty to mix together , so reading all the posts is very exciting to see what concocsians [ dont know how to spell it !!!! heehe} people come up with an give me inspiration :D

    keys - it's "concoctions" ;):D

    I'm "storecupboarding" too this month. My cupboards and freezer are full, and I need to siphon off almost all of my grocery money into the "things I have been waiting for the January sales for" pot.

    Last night for tea I had macaroni with chopped up bacon (the remains of a pack I opened at the weekend) and grated cheddar on top as I have a bit of really good quality stuff left from Christmas which is now a bit dried out. Was going to use up an old packet of noodles instead of the macaroni, but then I realised that they were best before December 2006 :o and they did smell a bit like stale cardboard, so into the bin they went.

    Among other things, there'll be lots of chicken curries on the menu for the rest of the month - I have about five curry cookbooks I barely use, and so many of the recipes call for chicken pieces/joints. I have at least four whole free range chickens' worth of joints in the freezer thanks to some bargain-grabbing last month. Jointing them was the only way they would fit in the freezer.

    So other than fresh milk and F&V, plus a couple of specialist Asian spices I am going to pop up to Brick Lane for after work as I've had trouble finding them locally (my neighbourhood's very multicultural and you can get every imaginable ingredient for African, Turkish, Caribbean and Chinese cuisine, but there really aren't any Indian/Bangladesi/Pakistani people in my area at all, hence no shops!), my needs for the rest of the month are pretty much nil. Might post an inventory of my fridge and cupboards later in the month if I'm in need of inspiration!

    You could make a fishermans pie. Cod, some veggies, a cheese sauce with parsley and boiled eggs. Pure comfort food.
