I used to make banana ice-cream regularly but no longer have a food-processor
. There are lots of things you can add - amaretto is good or rum, another option is a bit of cinnamon and maple syrup.:D

I bought a bag of bananas off our local market on Tuesday (£1 for a small carrier bag full ) They were all OK at the time but have all ripened at once (and as usual when you've got a lot of something nobody wants to eat it) It seems such a shame that they will go to waste so I wondered whether I could mash them and freeze in small batches to use for banana bread or muffins. I've already got a double batch of muffins in the oven and I've run out of sugar till tomorrow so no more baking today.

You can freeze the bananas whole, in the peel. They go really soft when you thaw them but they're fine for baking. I'd imagine that if you freeze the puree it might go a but gruesome looking when it thaws out, but you could always give it a go with one.
Half bananas, if you freeze them with a lolly stick in, make nice lollies too.0 -
I just freeze them still in the skins in a bag then pop them in the micro for a few seconds when I need them for banana bread0

I mash them and then mix them with custard and freeze the mixture in small pots for my weaning baby, that freezes just fine...............If Life Deals You a Lemon - Make Lemonade!! :j0

If you cant do any more baking, could you add them to a smoothie and then keep the smoothies refrigerated until someone drinks them?.Sometimes.I.Wonder.Why.I'm.Still.Here..Sometimes.I.Think.I'm.Going.Crazy.0

i read somewhere.... peel the bananas, wrap in cling film overnight, then the next day blitz them up and it makes a banana ice cream thingy.Sealed Pot Challenge - No 1520Want to be debt clear by June 2012:j0

Hi, I read on another thread about freezing bananas. I have some that , for me, are past eating. Do I freeze them in their skins or without?

Just shove them in, skins and all, they will go black, but once defrosted are great for baking, as the flesh goes slightly soggy.
