Yes, it'll be fine to freeze them in the way you suggest and use them in baking. It's what I do with ones that have gone too black for eating.

I froze bananas and they went really watery, which was ok for my banana bread recipe as it called for 4 table spoons of water, so I just omitted the extra water. I popped the bananas out of the skins first and then bagged them. Should I have frozen in the skins then?0

I've always frozen mine in the skins Lauz
They do go a bit mushy but such is the nature of the beast

I got my first online order earlier this week and made the classic beginners mistake of ordering a bag of bananas - it's huge!:o
There's no way I'm going to get through them all (like my bananas on the hard size) so wondering if there's any way of freezing them?
I'm also going to make banana loaf which will use 3 of them - can I freeze this? If so, is it OK when it comes out? (don't really like pre-frozen bread unless it's toasted).

You certainly can freeze bananas - peel them and either freeze whole and eat frozen like an ice lolly or slice up and make them into the most delicous banana ice cream - just whizz the slices in a FP until they are totally smooth (a bit noisy to start, but stick with it!) add some cream, or evap milk whilst mixing to enrich it if you like, but not necessary. Once made this refreezes well.Think big thoughts but relish small pleasures0

It's not difficult honestlyI just did an advanced search of the Old Style forum for threads with freezing bananas in the title.
There is a step by step guide to searching here:
I searched but couldn't find anything
Beware that once you start you could spend all day on Old Style looking up different threads.
