I know I can freeze them peeled or unpeeled, but do I have to wait for them to be soft and a bit brown before I freeze them? (I don't eat bananas, but I LOVE banana bread!)0

No they freeze just as well when they are very fresh. I'll add this to our 'freezing bananas' thread once you've had more replies as your question may help others.

Are they only fit for baking/etc when they defrost or are they fit to eas.make the most of it, we are only here for the weekend.

I think they are only good for baking. I don't care, I hate bananas, but love banana bread/muffins/cake etc.0

You can use them in smoothies and milk shakes as well!Our days are happier when we give people a bit of our heart rather than a piece of our mind.

I always peel and break mine into pieces before freezing as they defrost quicker and are easier to use for the below recipe if I want!
Whip up 2 frozen bananas (unpeeled!) with about 75ml milk, 1.5tbsp sugar and a dash of vanilla in a food processor or with a blender and you have instant soft scoop banana ice cream! Use skimmed milk and it's pretty healthy and delicious too!0 -
I have searched, but everyone suggests making banana bread/banana muffins. I'm on a diet and my freezer is already full of banana muffins, but I have more ripe bananas than I can possibly use in smoothies!
Can I freeze them to use in smoothies etc at a later date? thanks!0 -
Yes you can freeze them.
you can also make a sort of ice cream by blending them when frozen with a bit of sugar0 -
