Really easy Panasonic BM Banana Bread

  • Thank god I re found this recipe today, this is my life saver and works well in my Morphy Richards BM (off Freecycle) Last time I added some sultana's and it was lovely, had my gran coming round so she was very impressed because she says that when she puts any dried fruit into a cake it always manages to sink to the bottom.

    My DD nearly didn't let me have the banana's to put into it.

    Also tried with:

    Dried Apple
    Apricots
    Mixed fruit
    lovely

    My mum is quite jealous because she makes her Banana Bread by hand and even she says mine(well yours) tastes the best.

  • My kids love this, so do I. You can play around with the ingrediants, use less sugar, part whole wheat flour, add cinnamon or nutmeg, etc. I have also used other over-ripe fruits like pears and it turned out fantastic.

    In the breadmaker bucket, put in any order:

    2-3 over-ripe bananas
    1 cup (or less) sugar
    3 tbsp veg oil
    2 eggs
    2 cups self-raising flour

    Put on pizza cycle for about 5 mins - scrape down the corners with a spatula about 1/2 way through to make sure everything is mixed.

    Put on bake cycle for 55 mins.

    That's it - very yum especially warm with butter.

    Well it's in my machine now - a Morphy Richards Fastbake, put it on Fastbake 1 which takes 58 mins.
    I substituted vegetable oil for sunflower oil, I hope it doesn't affect the result. Smells lovely and it's not started baking yet!
    Also added some desiccated coconut (2 tblspns) and some cinnamon powder (1/2 tsp).
    Will let you know what I think as soon as it's ready. Can't wait! Mmmm.

    Oh bum, the BM has finished and it's not cooked enough, am chucking the tin in the oven for a bit on 150 degrees to see if that will finish it off. Smells divine, just hope I am not ruining it!


    10 mins later...

    it's ready, finishing it off in the oven worked a treat, and I must say it is sooo yummy. A bit on the heavy side but tastewise it's perfect.

    Am going to make an apple one now as I have lots of apples past their best.

    I have a Panny, but it took ages. In the end, I popped it in the oven at 150 degrees (thank you to Liney for the tip)

    And its just so scrummy.

    Is the overall opinion that it is best not to line the breadmaker. I've always lined mine and I must admit, the bread is never burnt at the edges. It was a bit underdone last time and the breadmaker was too hot and wouldn't let me leave it in for another 5 minutes. I wish I'd thought of putting it in the oven!

    My bread comes out crisp at the edges but never burnt or inedible.

  • I wonder why that was? Maybe my Panasonic gets hotter? I never have to bake it more than 55 mins - it is a bit moist but not gooey or underdone, and it has the cracking on top so I know it's done.

    I make a loaf about every two - three days, my dd's can't get enough of it!! Thank goodness Tesco does brown self-raising flour so at least they are getting some fibre in them!

    Just made this today for the first time and it was so easy will definately make again! Thank you! Might add choc chips next time :D Took 55 mins in panasonic, no burnt bits on mine.

    i made some fudge yesterday which was a total disaster as it didn`t set. so threw the runny fudgey stuff into the breadmaker with the above ingredients ( except bananas)....
    well it was absolutely gorgeous.....really moist and toffee`ish....
    ..and now its all gone..
  • Mollytrundle - what a great idea! I think I would have put in the bananas as well and maybe ended up with a banoffee bread.
