One of my favourite lazy recipes is Leek & Mushroom Pasta.
I saute a leek (or some frozen leeks to be really lazy) and a few mushrooms, make a quick cheese sauce with the whisking method -just put milk, butter and flour all in the pan together and whisk while heating until thickened, no lumps guaranteed! - add all these ingredients to some hot cooked pasta, season and stir. I like to add black pepper and a pinch of nutmeg to the cheese sauce to make it really tasty.
