leftover beef ???

    I use left over beef to make a pie:

    Left over roast beef chopped up
    Half an onion
    4 mushrooms (found at the back of the fridge)
    1 small potato
    1 beef stock cube
    Black pepper
    Bay leaf
    Lidl frozen mixed vegetables
    Frozen (shop bought) puff pastry


    Fry the chopped onion, mushrooms and diced potato in a little oil, add the chopped beef and put the lot into the slow cooker. Use water from the kettle to rinse out the pan and add to slow cooker. Crumble in one stock cube add bay leaf and black pepper. Give it a good stir and leave it alone for four hours.

    Add a handful of frozen mixed veg and leave for another two hours.

    When you’re ready to make the pie, thicken the juices with a teaspoon of corn flour mixed in cold water.

    Roll out the pastry; add filling, brush the pastry with some milk or beaten egg and decorate if you have time. Pop into the oven at 200 degrees until the pastry is risen and golden.

    A few people I was expecting for dinner are not going to come and I have already defrosted the roast beef, so I will cook it as normal, but am looking for meal suggestions to use up the remainder tomorrow. Any suggestions welcome.

    My favourite dish with leftover beef or lamb is to freeze the slices wrapped in foil. Then when you want to use them, lay in an oven proof dish and cover with gravy (either freshly made or saved from last time and frozen). Cover loosely with the foil and reheat in the oven for about 20-25 mins at 180 C. Serve with mashed potato (mashed with lost of butter and a handful of chopped parsley). Really yum and really money saving!

    I have left over slices of beef from yesterday, veggies, rice, pasta, potatoes, all the usual stuff really just no inspiration!

    I don;t have a mincer or food processer so cannot chop it up finely, and only have half an hour or so as I have to go out.

    Any ideas?

    I'm going with this I think! If I make loads I can have it for lunch tomorrow too. Yum. Never thought of doing this with rice - I usually do noodles but don;t have any. It's a genius idea!

    Would welcome other ideas though as there's quite a lot of beef left over and it's a waste just to stick it in sarnies.

    I cooked a rather large joint of beef last night so we're having stir fry tonight, I had some in sandwiches for lunch today (and will have some more in sandwiches for lunch tomorrow). Tonight I'm going to prepare a stew with the rest in the slow cooker to pop on tomorrow before I leave for work. I've found it's just as tasty leaving it to bubble all day with already cooked meat as using raw meat.
