leftover beef ???

    Mum freezes it in slices and microwaves it later for another roast dinner ;)

    Or she used to do it thinly sliced cooked again in gravy with onions.

    some of it will be frozen, but I don't have any gravy!

    Dinner was the beef, mushroom sauce, new potatoes, asparagus, and profiteroles for dessert. no gravy. and no mushroom sauce left!

    I would recommend trying beef this way, it was lovely! it was a 2 " thick piece of rump, browned on both sides on the stove then put in the oven for 10 minutes, longer if you wanted it more cooked. then cut thickly on the diagonal.

    I have quite a bit of beef leftover from last nights dinner. It was roast beef a la Nigella; cooked like a giant steak, basically! It's med-rare.

    Thought I'd do fajitas with some, but we dont' have the soured cream cheddar or salsa. And I dont' want to get them if I don't need to. We have brocolli, mushroom, cabbage, carrots (the usual veg) and rice pots, couscous pasta........

    Something fast, easy and not too stodgy ( I'm on ww, so no pastry, please!)

    Should also mention ther is about 1 1/2 lb left at least! :rolleyes:

    When I do fajitas and have no sour cream, I cheat and use mayonnaise watered down with lots of lemon juice :D Noone seems to notice and if they do, they've never mentioned it lol.

    Do you have any tomatoes and onions? Deseed the tomatoes and chop, chop onion finely (red onion is good) and toss in lemon or lime juice with a pinch of aslt and pepper. Voila, salsa! I like adding some chopped fresh corainder leaves to this too.

    How about beef stroganoff?

    Do you have any noodles? You can do a chow mein with strips of beef, brocolli, mushrooms and strips of carrot. Or do it as a stir fry and serve with rice.

    Slice it thinly and have it with horseradish and tomatoes in a sarnie. Or reheat some slices in gravy and have it on a hot baguette.

    I'm hungry now. :p

    Just remembered - I can't have much dairy so often miss out the cheese and sour cream and use liquidised sweetcorn instead - got the idea from someone here asking about creamed sweetcorn. ;)

  • I always do a sunday dinner i usually buy chicken as after doing a roast dinner i usually do a chicken curry & chicken pasta so that chicken does us 3 meals .

    If i buy a joint of beef we usually have loads left over which we normally use it for sandwiches but i would like to make some meals from it then it will be more valve for money as beef is expensive anyway .What could i do ,i do not fancy curry with the beef as beef can be tough or is it the way i cook it ?

    Any ideas would be appreciated
  • You could do beef stotties (beef onions and gravy) in a stottie with chips and salad

    How about:

    - Chili con carne (doesn't have to be made with mince!, just cube the left-over beef)
    - beef stroganoff
    - stew, particularly the delicious Cuban stew called Ropa Vieja (shreds of beef, green peppers and onions)
    Still waiting for Dyson to bring out a ride-on hoover...
