leftover beef ???

    I would use them till Tuesday but not sure if it would be ok Wednesday , why not freeze some and use the rest....:T

  • I just wasn't sure how well the beef would freeze?

    If I want to use left over beef for sandwiches, I cook it on Sunday and keep the leftovers in the fridge until Monday as it's much easier to carve thin slices when it's cold. I carve it up and freeze it, wrapped in tin foil, in portions that I can lift out one at a time for lunches.

    Yesterday i cooked roast beef. we bought a joint about the size of a loaf of bread thinking it would shrink but it didn't. anyway i am now left with lots of leftover beef.

    we are having some for dinner, but i not sure how i can freeze it for use at a later date .

    do i have to put it n a liquid ( ie gravy ) then freeze in portions or just in container's.

    i want it to retain it's flavor and not dry it out.

    I always freeze leftover beef in portions with gravy, curry sauce beef casserole etc and it's fine once defrosted

    You have to freeze leftover meat in a gravy otherwise it will dry out. I usually use a much thinner gravy. First time I froze leftover meat I used quite a thick gravy and it looked very unappetising when it was defrosted.

    If you slice it thinly and cover with a thin gravy or meat stock (if the beef is ion the bone use these with some carrots, celery, bay, peppercorns and water - boil for an hour or so) and then freeze it in bags (getting all the air out before sealing it) that should be fine .

    Alternatively you could mince the cooked meat up and make it into a bolognese or meat pie filling with stock, veg and toms - this would then freeze well and last longer than the sliced meat i9n the deep freeze.

    thanks for suggestions.

    i reheated some for dinner tonight. i put it in a roasting pan added a bit of water , covered in foil and cooked. it was delish. stayed nice and moist and so very tender. unfortunatly hubby like it so much he ate all the cold i had left in fridge aswell. but at least i know what to do with it next time i have left over beef.

    I have quite a bit of beef leftover from last nights dinner. It was roast beef a la Nigella; cooked like a giant steak, basically! It's med-rare.

    Thought I'd do fajitas with some, but we dont' have the soured cream cheddar or salsa. And I dont' want to get them if I don't need to. We have brocolli, mushroom, cabbage, carrots (the usual veg) and rice pots, couscous pasta........

    Something fast, easy and not too stodgy ( I'm on ww, so no pastry, please!)

    Should also mention ther is about 1 1/2 lb left at least! :rolleyes:
