    Cold roast beef, Jacket spuds and salad and horseradish.

    Use it for sarnies.

  • Morning Everyone

    I have a huge joint of beef that I'm planning to cook for lunch today and am wondering what to do with the leftovers? :confused:

    Mr LMLOD does not like cold beef sandwiches or cottage pie so those are out of the window, but other than that we're not too fussy!

    Any ideas? I've seen the recipes for rubber chicken so hopefully there are plenty for rubber beef :rotfl:

    I usually cut mine into chunks and use it in either curry, risotto or stirfry.
    The ability of skinny old ladies to carry huge loads is phenomenal. An ant can carry one hundred times its own weight, but there is no known limit to the lifting power of the average tiny eighty-year-old Spanish peasant grandmother.

    Make loads of gravy, and then heat up the leftovers in the leftover gravy, serve with spuds and veg - two roast dinners for the price of one!

    Maybe a thai-style beef salad, with coriander and sweet chili dressing? Or do a kind of hash with fried cubes of potato and onion. Or just warm through serve with yorkshires etc; after all, it doesn't really matter if the meat's not piping hot, as long as the gravy is!

    Hot beef sanies, put beef in ovenproof dish, onions if required, cover with gravey bung in oven to heat. Serve in large T/cakes with side potion of chips.

  • I have a large joint of beef I am going to cook (roast) tomorrow.

    There will be loads leftover, and i'd like to save it for sandwiches during the week.

    1. could I freeze the leftovers and just get them out when i need them? I don't want to do them in gravy as it is for sarnies.

    2. How long would they be ok for in the fridge? If i cooked it tomorrow, would it be ok for sarnies on tues and wed?

    any help gratefully received!!!
