Yes slowly cooking it in a stew or curry will def make it more tender. The longer and slower (ie lower temperature) the cooking time is the softer it will become
If you have one, a slow cooker is your best bet0 -

I have enought leftover roast beef from yesterday to feed at least 4 people. Any ideas what I can do with it for tonight's meal?

Have it cold with pickles
Slice it reheat it and serve it as a mini roast with fried potatoes and veg of your choice.
Mince it add onion and put in a pie
Mince it, and use it for a cottage pie
Put it in sandwiches
Slice it and freeze it for a day when you need a cheap meal
Hope this gives you a couple of ideas.0 -

any leftover gravy?
our family favourite is hash - chop 2 onions, a load of carrots and potatoes and chop the meat into bitesize pieces.
Put in pan with leftover gravy and some stock - and cook gently. Mine is already in the slow cooker today..but you can cook it on the hob - my mum cooked it in the oven in a casserole - leaving it open towards the end produced a sort of skin that we used to fight over!:jFlylady and proud of it:j0 -
