    I always buy big joints and use the leftovers in other meals.

    Cottage pie - Blitz chunks of beef in blender, put in pyrex, add enough gravy to moisten (let gravy go cold before adding to meat). Top with mash (again, let it go cold) . Can freeze.

    Or slice and freeze in gravy. Next time you do a roast, just allow to defrost, then heat, covered in microwave.

  • Chop it up in a food processor and make shepherds pie, use any veg and gravy that is left, I find it is so much tastier than using mince. If you dont want to use it now, I have frozen the roast beef then used it later to make a shepherds pie.
  • I would freeze leftovers and have in sarnies etc.

    I never gave DD much beef when she was little as its quite difficult to digest sometimes.

  • I am making a meat and potato pie for tea tomorrow with my leftover roast beef. Uses up the meat, veg and gravy, plus I boiled extra pots when I did the roasties and will use these.

    It will be fine on Tuesday, and will be fine to be frozen and defrosted

    I will be making this tomorrow and substituting the liver with brisket and garlic for onions for potted beef.

    Bet it would be lovely with your leftover beef and it freezes well, i portion it in ramekins before freezing.

    I sometimes make a casserole with leftover meat from sunday.
  • curry? or rissoles are nice and old fashioned, or you can mince it up and make shepherds pie.. or fajitas...

    When we had leftover beef a few weeks ago I cut it into chunks, mixed some shop bought curry sauce with some beef stock in a casserole dish with the meat and made a very nice curry/casserole!
  • i mix it all up in a bowl with the leftover mash and veg, leftover gravy and a bit of whilegrain mustard, then make up some pastry, and make homemade pasties for lunches for the week.
