  • Hi Lou! Don't be silly , not boring at all! Tell if you want to! Glad to hear this site is helping :D

have you been on the Debtfreewannabee board and put up a state of affairs? The people on that forum are brilliant and can help you come up with a plan to pay your debt off - possibly even quicker than you have thought on your own!

I'm definitely interested, Lou - that's what this site is all about, after all!

Strangely enough, I'm originally from Surrey, and my sister still lives there, so we have a county in common!

Lou - I'm from Woking _pale_:eek: (you can guess I'm not fond of the place!).

Sorry, this is only a flying visit - I'm at work at the moment and not really meant to be here at all, but I figure that if my colleagues can take cigarette breaks then I can take the occasional forum break! ;)

Dont be so silly! Course it can wait

Good work on the bananas!:j Smoothies, with yoghurt, cereal, on toast. Ill hunt you a thread out! Cheesecake, muffins (i have a great recipe of thriftladys) You can also freeze over ripe bananas for future baking. DO NOT THROW THEM OUT! :rotfl::p I read someone say on toast sprinkled with sugar and cinnamon (optional), done under the grill for a minute. Not tried but sounds yummy!

    Glut of bananas

    Thriftladys recipe
    - can be used when you have more dosh as you would need baking powder and bicarb . ..... might get the lot for 2.00 depending where you shop. Or can make in a loaf tin?

good banana muffin recipe which can be made in a cake or loaf tin if you give it a bit longer in the oven. Thriftlady

Btw, you can freeze bananas for baking .Just put them unpeeled in a bag in the freezer.I always do this with over-ripe ones-perfect for baking.

    Banana Muffins/Cake/loaf

Put in a large mixing bowl
    10 oz plain flour
    1 tsp baking powder
    1 tsp bicarb
    1/2 tsp salt

In another bowl mash 3 bananas(the riper, the better)
    Add
    4 oz sugar
1 egg, beaten with a fork(I never use the egg as dd allergic-you can replace it with 3-4 tbsp of milk)
    2-3 fl oz milk
3 fl oz vegetable oil or melted butter

Add the liquid ingredients to the dry and combine thoroughly,BUT be careful not to over-beat,on no account use an electric beater, the mixture should look quite lumpy.

Line a muffin tin with muffin cases,or grease the cups well and fill about 3/4 of the way up.Bake at 190-200c for about 25 mins.
If you want to make a cake pour mixture into a greased 1lb loaf tin or a 7 inch round cake tin and bake for about 35 mins.check for doneness with a skewer-if it comes out of the centre of the cake clean it's cooked.
I usually double up the mixture,so I'm not entirely sure about the tin sizes ,I'm afraid.

You can obviously add chopped nuts, raisins, dried apricots or choc chips. Some mixed spice is nice too.

  • Good evening Zippy, still stalking me I see!:p:rotfl:

Just wanted to second that recipe of Thriftlady's - it's fab, and I've just taken a dozen of then out of the oven. I also usually fire some nuts in too, especially when I make it into a loaf, as the wee one isn't so fussed on nuts so won't eat the muffins if he finds any. Men!

Off to bed, just checking to see if FaithCecilia had checked in (what are we like?) She's probably been scared right off by all the where is she stuff, or the questions about her grammar ;)

    Goodnight, Jackie X

Hello Lou - hope your computer is all fixed now!

Just a quick one before I go off and make my own dinner - pearl barley is good for bulking out soups and stews. It doesn't have much flavour on its own but is really good at taking on other flavours, and has a nice, slightly chewy texture - something like brown rice, but not quite as firm. I'm very fond of the stuff, personally, and put some in most of my stews during the winter.

I hope that's helpful, as I got the impression from your post that you were a bit bemused by it!
    :)
Back after a very long break!
