pasta salad

  • Make a vinaigrette dressing using slightly different ingredients, my DDs loved this on pasta salad for packed lunches, and so did all thier friends!!!

    3 Tablespoons Walnut Oil
1 and a half Tablespoons Balsamic Vinegar
1 clove of garlic crushed to a soft paste
1 teaspoon of whole grain mustard
    1 teaspoon of sugar
hald a teaspoon of salt (or as much as you like to your taste)
aa very good grinding of black pepper

Put all the above into a screw top jar and give it a really good shake so it mixes completely. Pour over the pasta salad and give it a good mix.

    Hope that's useful, Lyn.

    Hi guys,

Could you possibly advise me on the above please?

I am having a bbq and have a tin of toms and pasta in the cupboard. I have also found a packet of pasta n sauce which is up at the end of august. I was wondering if I could add the toms and pasta with the packet mix to make it go further.

Would this be ok and how would I stop it from being dry. Do I need to add anything else?

the packet will be ok after the best before date as long as its not been opened so i'd save that.

i'd chop up tomatoes in the juice, add some herbs/garlic/grated carrot/onion/sweetcorn or whatever then mix with cooled cooked pasta. that sould make loads as you only need to coat the pasta, not have it swimming :)

Sam, no recipes as such but I cook a load of pasta then rinse the cooked pasta well under the cold tap to make sure the pieces don't stick together. I then store it in the fridge and leave the family to mix their own pasta pots eg. one dd adds chopped chicken and cucumber and salad cream, the other sometimes adds chopped peppers and sweetcorn or a cheesy tomato sauce. Another option is to stir through a small tin of tuna. Add mayonnaise or salad dressing of choice to any of these as desired. I've also used cooked and chopped veggie sausages mixed in with a tomato sauce.

  • Pasta absorbs flavours really well. I always add the flavouring when it's hot, then cool and eat. This works particularly well for tomato sauce.

I like roasted veg stirred in and a bit of tomato puree if too dry. Have been known to stir in a tin of red kidney beans as well.

To answer OPs question, find out which pasta salad your DH likes then try to replicate it. Basically all you need are the veg/salad/meat bits he likes and something to lubricate it like mayo or tomato sauce.
