Just looking for some inspiration to liven up dull salad leaves - what's in your HM salad dressings and then another questions - how long will it keep in the fridge?

Hi - olive oil, wholegrain mustard, honey & balsamic vinegar - yummy - make it as I need it so no need to store in fridge.

You need 2/3 oil to about 1/3 something acidic (vinegar or citrus fruit juice). Choose whatever oils and acids you like, and experiment with different combos. You can add other flavourings to suit too, crushed garlic or a small amount of mustard are good ones to try. Stick it all in a small screw top jar, and shake furiously, and dress immediately. You can make big quantities and store in fridge for a couple of weeks, shake it well each time before you use it, but to be honest, I just make enough for what I need on a time by time basis, as it only takes seconds to do, and is easy to make in small quantities.0

I use 5 teaspoons of lemon/lime juice
good pinch of salt
good pinch of pepper
mix together and pour over the salad,my husband and kids won't eat much salad without this dressing but will go back for seconds when its in the salad.And yes the lady in the avatar is me

This is a great reduced oil recipe...
2 tsp dijon mustard
1 tsp salt
2 tsp sugar
60 ml oil
40 ml red wine vinegar
60 ml water
(optional ingredient - 2 tsp Lidl salad herbs)
Put all of the above in a used jam jar/ container with a lid and shake vigorously. The dressing will separate after a minute or two but just shake again to serve.
Keeps in the fridge for weeks.0 -

And I've given up on salad leaves altogether! Like the OP said they can be dull, plus I usually make salad just for myself and leafy bits just don't keep well.
I do have salad though, minus the leafy bits, and just add a splosh of olive oil and a bit of wine vinegar then stir the salad round - it's lovely on cut up tomatoes.
I learned to dress a salad like this when I lived in Spain, with a Spanish family, where a salad of sliced tomatoes and onions dressed with olive oil and vinegar was on the dinner menu most days. There will be dressing left - try mopping it up with crusty bread - mmmmm!

Anyone here got a good recipe for salad dressing? preferably one where you put all the ingredients in a screw top jar and shake? Any ideas would be much appreciated.
