Something I have never understood....

Sorry to jump in but anyone seen Saturday Cooks where he boils a tin of Evaporated milk and it turns out like toffee. how did he do it

I am sure there was a thread a while back about this, but I can't seem to find it.
Made a choc fudge cake yesterday for DD1's bd. Now the fudge icing used some evaporated milk, but still have a load left which I decanted into a container in the fridge.
2 questions DS wants the same cake for his bd on the 6th, will it be ok after 3 days in the fridge? Plus what can I do with the leftovers? Something that freezes would be perfect.

It will be fine after three days in the fridge as long as it's covered. I'd pop it into a container with a lid.

It will be fine. If you fancy making tablet it's very easy in the microwave. 170mls of evaporated milk (this is the amoung in a teeny tin of it), 4oz of butter 1 lb of sugar. Put in the biggest bowl you have and microwave in bursts of approx 4 mins, beating vigorously by hand or with an electric beater every 4mins until it becomes a rich caramel colour and starts to seize,(12-16mins) Watch out for it bubbling over the edge of the bowl. Then pour into a lined tray or silicone dish. (this amount fills a 6" X 6" square tin for me) mark into small squares and cut when cooled and set. Store in an airtight tin or dish.
Another use is to mix with dessicated coconut and a drop or two of vanilla and make into coconut macaroons, simply pipe small balls or make balls by hand and bake in the oven for about 10-12mins. Hope someone can help. Just cleared out my cupboards and found two tins of evaporated milk. Firstly they are over a year out of date
so can I still use them? Secondly can someone suggest how I use them, must of bought them for a recipe but for the life of me cannot remember what it was! So need some suggestions please.

hi, i'd still use them, as long as the cans aren't rusted up.
what for, childhood favourites were evap milk on jam tarts or on tinned peaches in syrup for pud.
i had a recipe ages ago using evap milk in indian curry, i guess it could go in any recipe instead of the cream/yogurt.

As we can't see it, it's really down to your own judgement whether or not you think it's worth the risk. Personally I would open them, see how they looked, if they looked ok then I'd have a sniff and if it smelt ok then I'd taste a tiny bit. If it tastes as it should do then I'd probably use it.
