    what can I do with the remainder of a carton of evaporated milk ( ie tip top, carnation) dont want to open it then throw the rest away. thanks
  • depends what you're doign with the first half. ;)

    I usually drink it neat *face of shame* or tip it over a crumble, or add to a rice pudding.

    or, you can make a really nice creamy pasta sauce with evap, mustard and lemon juice, i know it sounds unlikely but it's very nice especially with chicken, peppers and sweetcorn.

    Its nice added to home made mushroom or potato soup, then you could freeze the soup to use in the week.

    thank you for your ideas, I used to have it on jelly as a child but thought it would be nice on pineapple and meringue. by the time I picked up the dish the meringue had disappeared!

    I use evaporated milk in my chocolate cake recipe, but I measure out the correct amounts, and freeze them in some tiny little containers from quidland, then I just take one out at a time. I think one can of milk lasts me for about 6 cakes that way, ... and it is very yummy chocolate cake!!!

    Oh and Morrisons sell trays of evaporated milk pots, just like the little pots of normal milk you get in the cafes. They might be better for you if you dont use much!
