    Yummy!! - You could also make the meatballs and serve with a tomato sauce & pasta (ala Goodfellows) or make a meat loaf? I'd bung in some of the apples as others have also suggested.
    You could core the apples and fill with dried fruit (or any mincemeat you have still rolling around from Christmas) bake them for about 15 - 20mins...as its summer serve it with some ice cream.

  • I make a thing which we call hurry curry with pork mince. I just brown the pork mince in a frying pan and add a couple of grated apples, a grated (or finely chopped) onion and fry for a bit longer. Then I stir in curry powder, salt, a bit of lemon juice, a handful of sultanas, a big spoon of mango chutney and some dried corriander. I mix a bit of natural yoghurt with a tsp of cornflour and stir that in at the end. We have it with naan bread and its really tasty.

    I'm not sure we could better that, Spendaholic. Was going to suggest meatloaf - mix two handfuls of oats with mince, stir in an egg to bind it and a teaspoon of salt. Shape into a loaf and cook in medium oven until well browned, then make up some gravy and pour it in for the last ten minutes to soak up some of the juices. To make the most of the oven heat, put in some jacket potates and core and stuff the apples etc for baked apples or use apple to make a crumble.

    Hi everyone,
    I've ended up with roughly a pound of minced pork. I had a huge boned leg in the freezer from Christmas, I defrosted it at the weekend and cut it into 3. We had 1/3rd roasted on Sunday, I made 'Somerset Pork' in the slow cooker, then froze it, with another 1/3rd..then minced the remaining third. Now I'm stumped for ideas as to what to do with it. It will need cooking tomorrow..can't re-freeze it till its cooked. Ideas, and/or recipes please.

    Hello Le Foot,

    If you really can't decide, you could always brown the meat, then freeze it ready to use when you are inspired!

    I like it in meatballs or meatloaf, with an equal weight of minced beef or by itself with a few breadcrumbs.

    Some people love it for bolognese, haven't ever tried it.

    Thanks to each of you. I think the meat balls with tomato sauce and pasta sounds promising. Gus,..I've made faggots times, but this time I don't have the pigs 'pluck' (Lungs, heart & liver) , and, not only don't want to spend any more money, but also I would have to order the 'pluck' as butchers don't stock it 'per-say' these days. The last time I made faggots I had big problems getting hold of the caul..or kell(depending on where you live) and they are just not the same without it.
