Thank you! I am on page 3 now of the "Pork Mince" thread and my eyes have been opened. I never think to use pork mince apart from meatballs, it just seems a bit wrong - stupid I know, but I will certainly start to look at it in future as an alternative to beef and lamb.
I must,must, must make a meatloaf. DH tells me he has never tried it, so that has to change!0 -
One recipe we do quite a bit is a stuffed courgette bake.
Halve lengthways and scoop out the insides of some courgettes or a marrow, arrange halves in an oven dish (I use a rectangular lasagne dish). Fry a pack of minced pork with the bits scooped out from the courgettes. Mix in some red pepper & almond pesto (orig recipe said 1 jar but I tend to use half a jar with 500g mince to save some for another meal).
Fill the courgettes/marrows with the pork mix and crumble some Feta cheese over the top (again the original recipe said a full 200g pack but I stretch this to save some for another meal). Bake until soft & the Feta has browned.
This does two meals for two adults and 3 children, I tend to serve it with rice.0 -

Ok, so I am skint at the moment what with one thing or another and have just had a rumage through my freezer to see whats in there so I don't have to go shopping apart from milk, eggs, potatoes etc.
I have found noodles in there which I am not sure could have been frozen but they were anyway amongst veg fingers, mince, and a few other bits and bobs but I am wondering if you clever lot could possibly help me.
Pork Mince - Other than make pork and apple burgers, does anyone have any suggestions of what I could do with it please?Lucylema x :j0 -

If ou have some pasta, tinned toms and an onion you can make a lovely Italian meatballs. If you have a little garlic and either fresh or dried sage to add to the meatballs give the mince a little extra whizz and you can get away with no egg to bind and save that for something else. make tiny little meatballs and fry off them set aside. Make a simple tomato sauce by sweating down the onions and adding the tin of toms. Reduce till it is a lovely consistency and then add your meatballs back in and heat thoroughly. If you have cooked some pasta meanwhile ou will have a lovely Italian dinner. By making the meatballs tiny and putting them in the sauce you won't need all the mince so if you bulk out the rest with breadcrumbs you should still have plenty to make burgers or something else as well.0
