The slow cooker is perfect for bean dishes and soups/stews, much easier and imo better than doing it on the hob as they come out so tender and creamy.
Vegetable pasta sauces and ratatouille are excellent in the slow cooker, the richest pasta sauces I've ever made have been done in the slow cooker bain marie style in under two hours.
In terms of the difference in energy consumption, I don't know if I'll make my money back on my slow cooker(though it was only 12 quid), but it saves so much time cooking and washing up that it's 1000000% worth it for me.Living cheap in central London :rotfl:0 -
Nothing to do with slowcooker but I don't know if you have tried doing this for sandwiches. I buy quorn fillets and cook them once they have cooled I grate them and mix with mayo just treat it like tuna and add what you like to it. My daughter likes it mixed with red onion or sweetcorn but you could use anything.0

I'm a vegetarian and have a great recipe book:'Slow Cooking for Vegetarians' by Annette Yates ISBN 978-0-572-03387-3.
I've made lentil dhal,two couscous recipes,a tomato and fennel dish,a rice dish and a spiced apple butter.All recipes I've made a few times and would make again.I'm still at the stage where I need a recipe book.
It has sections on soups,starters and light meals,main dishes with vegetables,main dishes with pasta or grains,main dishes with tofu and quorn,savoury and sweet sauces,puddings and deserts,cakes and preserves.
There are a hundred recipes,ten of which are for quorn/tofu.I can't give you any feedback on these recipes,as I haven't tried any yet.
I did make my favourite soup once in the SC,but didn't get it quite right.I think that I put in too much liquid.
I would certainly recommend getting a slow cooker,there's loads you can do.

sorry to resurrect an old thread - I'm sick of coming in and eating rubbish cos I'm too tired to cook so am thinking of dusting off the barely used slowcooker. But there's not really a huge amount of veggie recipes on here that I've been able to find. I'm thinking of treating myself to this book but am wondering whether it's one of those ones with recipes with 20 ingredientsas I have another SC veggie book and even looking at it makes me feel tired!
Or if anyone has any further veggie slow cooker recipes (preferably slimming) I'd be really grateful!

Myself and OH are both vegetarians, I generally like to cook our meals and have some leftover for lunches during the week, and freeze portions for lunch or dinner at a later stage.
Just some general ideas of things we like to eat, to see if it would be worth/do-able to do any of these as slowcooker dishes, as most of the slowcooker threads are about meat. How does quorn do in the slowcooker?
pasta dishes- cheese macaroni, tomato, pesto cream sauces, med veg sauces, spag bol with quorn mince.
veg casserole with beans and potatoes, sometimes quorn.
soups
shepherds pie with quorn mince
stir fry veg with egg or rice noodles
potato/veg bakes
kormas, using quorn
Do any vegetarians have any other ideas for things they do in their slowcookers?
We are both out for long hours during the day, so would a slowcooker be useful to cook anything from the above, leave it in all day and return at night to a cooked meal?
I don't think you'd manage a stir fry or shepherd's pie in a slow cooker,but there are lots of other possibilities.
I'm a vegetarian and I have a book called 'Slow Cooking For Vegetarians' by Annette Yates.There is a wide variety of recipes,including soups,starters and light dishes,main dishes with veg/pasta and grains/tofu and quorn,puddings and desserts.I'm not very confident throwing ingredients together and prefer to follow a recipe.I haven't tried every recipe in the book,but every one I have tried has worked.
A few of my favourite dishes are:
- tofu in tomato sauce
-spiced couscous with apricots,feta and pinenuts
-lentil dhal with onion,garlic and cumin
-fennel with tomatoes and lemon
- vegetable couscous.
So,yes,a slow cooker is a good buy!

I know just what you mean about 20 ingredients, some of which you may have to go to Paris and / or Peru to buy

The book has arrived from library, sadly it is "20 ingredients" style, soak haricot beans overnight, add pinch of saffron strands, a bit of root ginger, rosewater, curry leaves, garam masala, coconut milk, peeled chestnuts etc etc
Maybe these are staples in your cupboards, but not in mine
Could be worth a browse if from library, there are a few recipes that look fairly straight forward, and it does cover soups & pudsEight out of ten owners who expressed a preference said their cats preferred other peoples gardens0 -
Hi I have just got my SC from Ebay. I am also vegggie I have just found a site called savvy vegetarian that has some very good looking veggie recipies on. I am going to try the Corn Chowder - I dont know how to do links sorry but HTH P0lly xJBFF # 20 NSD 12/25
