Slow cooker Veggie Style

I have a confession to make - following all the discussion on here I bought a slow cooker a couple of months ago and I've only used it twice!
Apart from soups and bolognaise I can't think what else to cook in it.
The limitations are that we're veggie and I can't eat spicy food so curries n chillies are out.
Any recipe ideas gratefully received as its just a big silver dust trap at the mo

I make stew in mine without the meat. All the normal winter veg and veg oxo cubes.
