Here is a recipe for stuffed peppers with coconut rice and mangoes:
4 large red or green bell peppers
2 tbs peanut oil
1 large red onion
2 cups cooked jasmine or long grain rice
1/2 cup unsweetened shredded coconut
1/2 cup dry roasted cashews or peanuts
1/2 cup thai basil or corriander
2 tsp lime juice
1 tsp sugar
salt and pepper
1 ripe mango peeled and halved.
Slice top off peppers and discard seeds. Arrange upright in slow cooker.
Heat 1 tbs of the oill over medium heat in a pan. Add the onion chopped up pepper tops and cook for approx 5 mins.
In a bowl combine the onion mixture, rice, coconut, cashews, basil, lime juice, salt and pepper.
Chop one half of the mango and add to the stuffing.
Mix well and spoon into the pepper cavities.
Cover and cook on low for 4 hours, unitl the peppers are soft but still hold their shape.
Cut the remaining mango into thin slices and garnish peppers when ready to serve.Twins, twice the laughs, twice the fun, twice the mess!:j:j0 -

I have been given a small capacity slow cooker and having never used one before probably because I thought they were for meat based stews etc. Are there any veggie recipes here? I use Quorn and soya too.

These are not strictly slow-cooker recipes, but great for vegetable recipes many of which can be done in a slow cooker

I am not vegetarian, but I made the winter vegetable stew in my slow cooker(can be found in the carrot section) and topped it with vegetarian dumplings when I had visitors. Went down very well with my visitors0 -
hi, i have looked through the slow cooker thread, but a lot of it is meaty dishes,would we be able to start a new vegetarian slow cooker recipe thread, I would love some tried an tested chill and curry recipes, anything that is cheap and tasty would be great!

All the bean recipes work well in the SC.
I cook them to start with by soaking and 10 minute boil and then put them in the SC. How long it takes varies with the beans but the pack gives an idea. Chickpeas take longest.
I cool and freeze these. You could make bean dishes with the beans cooking as the dish cooks IFSWIM!
Casseroles with soya mince, quorn chunks all work well.
