    I use breadcrumbs to make my own croquette potatoes (mashed potatoes in breadcrumbs). I also use it (with parmesan cheese, garlic butter and herbs) to make a kentucky-style coating for chickenwhich I then bake in the oven.

    You could use them to make your own fishfingers too.

    Don't forget you can freeae them too, until you need them.

    You could try making some kind of schnitzel. Get some turkey steaks and bash them until faily thin (1/2cm), dip in some lemon juice, then coat in flour, dip in egg and then breadcrumb. You can then fry them in a frying pan with a little oil and they are really scrummy. Lemon makes all the difference!

    dannahaz posting about the croquettes reminded me of something. in the netherlands, croquettes are known as Krokets, only they're not just filled with mashed potato. They're an extremely popular snack, often sold in automated fast food outlets known as Febos (lots of small boxes with transparent sides, you put your money in the one you want, and bingo, you got food). They're also made at home as well, a good way to use up leftovers, if you don't mind fried food/frying food.

    a couple of recipes can be found here, but you'd have to scroll down for it... also the wikipedia entry on croquettes/kroket (along with a picture of the Febo!) and another recipe here. the big bonus behind them is that, like many other finger, fried food (like spring rolls, for example, or the much larger indonesian cousin, loempia) they can be frozen uncooked and then defrosted and cooked (and with small fried foods, they could even be cooked from frozen. in theory at least).

    and the relevance to the thread? they're rolled in breadcrumbs!

    I slice the bread up, and when I have the oven on for something else, I put them on a tray in the bottom of the oven for them to dry out thoroughly.

    I then allow the bread to cool, toss in to a plastic bag and roll it with a rolling pin ....

    I freeze my bread-ends when I have any, and then I freeze the bread crumbs ...

    Uses as other people have mentioned - also stuffing / HM fishcakes ....

  • Hello - we always have crusts and ends of bread in packets which get thrown away when we start a new loaf. I tried freezing them for toast but noone ever used them and we ended up with a freezer full of loaf ends. Sooo my question is - how do I make breadcrumbs? And can they be frozen for later use? And if so - do you defrost before use? Also, as I am new to this old-style - what different things can you use them for.

    Sorry to sound a bit dim!

    Put stale bread in a blender. Switch on said blender. Voila, crumbs!

    I use my handblender and whizz them with that. You can freeze them the same as you do with bread. As they are small you can use them frozen in soups to thicken etc etc but I usually defrost them, only takes half an hour or so. Can use them for coatings, toppings. Loads of things. I used to throw loads away but don't now.
    One day I might be more organised...........:confused:

    Do they not go mushy and soggy when you defrost them?

    Or do you use them from frozen? Sorry, I probably sound really stupid!
