how to make hm breadcrumbs?

    You can also whizz them in the blender, as said earlier, and lay them out in a thin layer on a baking sheet on top of a radiator (when it's on) in the oven once it has been turned off and is cooling down, or in the airing cupboard. Right through the autumn/winter months, I dry mine on the top of the woodstove and by spring have enough to last me right through till firelighting time again.

    Once thoroughly dry (they'll crunch if you touch them) store in an airtight container as this saves freezer space.

    Use them to bulk out a meatloaf or burger recipe, coat your own fishcakes or make your own stuffing balls by adding finely chopped onion and herbs and bake with a roast in the usual way.

    During the summer months, I whizz mine and add to the dogs' food as a cheap and nourishing way to extend their calorie intake and also avoid wasting the crusts.
  • Thanks all - so, do you have to dry them out to use them? I remember those breadcrumbs in boxes and they were always crunchy. :confused:

    the packet breadcrumbs are nothing like the "real thing"

    we have a BM and when we make pizza we usually have some spare dough.

    Ive been known to just sling that on a tray in the oven ( not bothering to roll it or anything) while its heating up. It goes firmer, like pizza crusts. I tear this up then go at it with my hand blender.

    then I take pack of chicken fillets and flour/egg/ then roll in the crumbs

    Fry them off for 5 mins each side in a frypan

    VOILA chicken dippers. Abolsutely NOTHING like the ones you can buy ready done, these are a triumph and perfect with sweet chilli sauce/ mayo/ ketchup etc as a side to the pizza.....

    NOW IM HUNGRY!!! *drooooooooooooooooooooooool**

  • Sounds yum! I wasn't suggesting I would buy the packet ones - I remember them being horrible!
    Still not sure how to use up the bread ends though? Do I have to dry them before use/freezing or not? Thanks all

    I save the crusts etc and lay them out on a baking tray and put in a cool oven for a short time (say half and hour) Then I whizz them in the blender and put them in freezer boxes or polythen bags in the freezer. Very useful for doing schitzel and fish recipes.
  • Brilliant, thanks Janb5 - I will do that. I make lots of cheesy bake type things and I think they might be nice on that ... I find I get bored of the same old all the time so it will be a bit of a change to chuck some breadcrumbs on the top ... :thumbsup:

    This was similar to the way my mother did breadcrumbs but as she used a lot of them there was never enough to freeze. She had to be quick to get the 'heeles' as we knew them as it was always a race for us kids to get them first (great with lashings of home-made jam).
    Mum always did her baking at the weekend and there would usually be a tray of heeles in the bottom of the oven at some point getting ready for use during the coming week.

    i roast chunks of peppers,red onion and courgette in a little olive oil then whizz together breadcrumbs (straight from the freezer) i made by whizzing up left over bread with some olive oil and garlic then sprinkle on th roasted veg and pop back into the oven for 15 mins or so till golden...fab and no need for any potatoes or anything with it i use it a lot with fish

    I do mine in the food mixer. I remember trying to do it in a blender years ago and just getting a burning smell so I gave up and used to buy them in a tub. I'll try the hand blender though as that will be easier than dragging the food processor out every time.

  • i remember making fresh breadcrumbs as a child with my mum by putting the bread inside a colinder and just rubbing round inside with clean hands and the crumbs were collected on a large plate. And thats takes me back some 35 years ago
