I have a breadcrumb box in the freezer - I empty all the crumbs from the breadbin into it when I start a new loaf, all the crumbs from slicing bread. I also use the food processor to whizz up random stale bits of bread. It's surprising how quickly it builds up, even just using crumbs from the bread bin.0

I'm sorry if this has been asked somewhere else or if I've put it in the wrong place... I did do a search first
I've just put a load of stale bread in the food processor to make breadcrumbs. I'm planning on making some fishcakes at some point when supplies are running low.
I was just wondering... is it okay to put them in the freezer if the bread was previously frozen and then defrosted, bearing in mind too that when they're on the fishcakes they'll be put back in the freezer AGAIN.
Obviously I wouldn't do this with meat (unless it was cooked in between) but is it safe for bread? And if not, how long will they keep in the fridge for in a zip-lock bag?

When making breadcrumbs, I tend to put them in a warm oven for a while to dry them out (ie. oven off but after having used it for something else). After that I use some, freeze some - it seems to be okay with bread that's been frozen before.MFW 2019 #61: £13,936.60/£20,0000

Same as above with mmmsnow, I have refrozen my breadcrumbs no problem and not had an issue. It's more of meat based/protein that seems to cause problems. Not sure why!
I am a bit fussy about things but with breadcrumbs never had a problem yet - you will be fine to do it.
One tip, I have a couple of bags of crumble mixture in the freezer ready to go (I do several batches so I am not making individual amounts and it's good when I am short on time having two dogs and two horses and the OH!) so mark them up on the bag because I have got crumble out before now instead of breadcrumbs :rotfl:Cat, Dogs and the Horses are our fag and beer money:beer:

..and can I chip in here:) - and say I have started freezing odds and ends of bread in a ziplock bag in the freezer. So - thats where I put ends of bread, etc, for future use all blitzed up as breadcrumbs.
So - I've been using breadcrumbs to top off casserole bakes in the oven - ie my layer of "filling", then a scattering of breadcrumbs, some dobs of butter and some slices of tomato and baking up.
I would be interested to hear what other uses peeps have for breadcrumbs - as my imagination tends to run out after topping casseroles and doing apple charlotte.0 -
Thanks for the quick replies. I have labelled them and sqeezed them in the freezer. The bread was so stale that I didn't feel the need to dry them out in the oven first but I'll bear that in mind for the future.
I saw breadcrumbs being sold in a supermarket this week for 64p for a small tub! Wouldn't ever pay that anyway but still feel like I've saved myself money0 -
I actually don't bother to freeze my breadcrumbs. I freeze ends and stale bread like ceridwen until I have loads, blitz them in one big batch then dry them out / toast them in thin layers in a cooling-down oven as mmmsnow said, but then I just store them in an airtight jar. As long as they are dried out properly and the jar is really airtight, they will store this way for ages - I've never had any go bad before I've used them, anyway.0
