What about
-egg and mayonnaise, add some black pepper.
-cucumber and cream cheese (mix in some dill with value cream cheese and no one will notice)
- A nostalgia theme for one platter--lemon curd, jam, or if you were american peanut butter and jam.0 -
oooh a good one to make tuna go further is mixing it with grated carrot, very finely chopped celery and salad cream with a good sprinkling of salt and pepper to balance the slight sweetness of the salad cream. It also makes a lovely topping for jacket spuds!0
-
Curried corned beef - you stretch it by adding in a lot of mango chutney, mayonnaise and curry powder to taste!0

What about savoury cheese? Cheese and mayonaise and either chives, spring onion or onion. Also you could make cheesy coleslaw just mix coleslaw and cheese.Lose 20lb in 12 weeks 5/200

Tuna with finely chopped onion and mayo, chicken and stuffing - make the stuffing up with a big dollop of butter and a couple of oxos dissolved in the water before adding the (value) stuffing mix. Make it fairly sloppy so that it will spread on the bread and there is no need for butter. Cook the chicken in the slow cooker to get every last bit of meat off it and you can use the carcass for stock later:D The sandwiches are delicious and cheap to make.
Grated cheese with grated carrot mixed together with mayo is nice too.

I run a sandwich van, LOL! Our top sellers are: egg mayo, tuna mayo & cucumber, tuna mayo, cheese & red onion, tuna & sweetcorn, brie & cranberry, cheese & red onion, cheese & homemade chutney, cheese & coleslaw, roast chicken & stuffing, chicken bacon & mayo, brie & bacon, bacon & egg mayo, BLT, roast pork apple sauce & stuffing, roast chicken salad.
Also top sellers but more work for you to reproduce - red thai chicken, chicken tikka, coronation chicken.
Cut sandwiches in 4 and put triangle point up, cover with a lightly damp teatowel till you finish then double wrap in cling film.0 -
you could also do a 'Ploughmans Platter'. buy a big block of 'Extra Mature' cheddar. Grate it for sandwiches as it goes further than slicing it. Then make some
Cheese and Branston Pickle
Very thinly sliced onion or finely chopped scattered sparingly on the bread and butter.
Apple Chutney
Thinly sliced Ham if finances run to it.
Tomato - either fresh or Tomato chutney.
Use a variety of breads too if you can!0 -

Did anyone else see the news yesterday recommending a toast sandwich as an 'Austerity Lunch' - apparently popular in Victorian times. As the name suggests, slice of toasted bread between two slices of bread. Seasoned with salt and pepper to taste. Apparently this will cost 7.5p for one round and is the cheapest lunch you can make (bet some on here have other ideas about that!).0
