This is incredibly easy to make and delicious.
The lemon curd is very easy to make, so don't be put off!0 -
I just bake a standard sponge and then whilst its still warm mix some lemon juice with some caster sugar (nearly a paste) and plonk on the top . Something my mum did, and I've copied. you end up with the lemon soaking into the top of the cake and a hard sugar top.Baby Year 1: Oh dear...on the move

I do exactly the same, and its tastes so moist and sweet but leaves your palate wanting more......I can't keep discussing food threads its making me hungry.I had a plan..........its here somewhere.0 -
I don't know who posted this recipe, but I'm sure I got from here (i did a search but still couldn't find it)
Lemon drizzle Cake
110g butter/margarine
170g self raising flour
170g caster sugar
4tbsp milk
Grated rind of 1 lemon
2 eggs
For the drizzle:
Juice of 1 lemon 3 heaped tbsp icing sugar.- Preheat oven to Gas 4/180c or Gas 5/190c for muffin size
- Place all cake ingredients into a bowl or processor and mix until smooth
- Place in tin of your choice and bake for 40-45 minutes, 15-20 for smaller size.
- Mix syrup ingredients together, *word has been censored * hot cakes with a skewer or fork and pour the syrup over. Leave in tin to cool completely.

I make Mr BE's choc yoghurt cake - but leave out the cocoa - and add 1 tsp lemon extract and the rind of a lemon. When it's cooked and still hot, stab it all over with a skewer and pour over the juice of the lemon mixed with 3 tbsp of sugar.“the princess jumped from the tower & she learned that she could fly all along. she never needed those wings.”
