Here is a different lemon drizzle recipe which makes a 2lb loaf cake.
125g soft marg
100g caster sugar
150g SR flour
2 eggs
2tbsp lemon curd
For the topping:
2tbsp granulated sugar and juice of a lemon
Beat marg, caster sugar, flour, eggs and lemon curd together. Spoon into greased 2lb loaf tin, base lined with greaseproof (or preferably use loaf tin liner) and bake 45mins at 180C (350F, gas 4) test with skewer, if it comes out clean it's done. Mix together topping, pour over warm cake and leave in tin until cold.0 -

Lemon Drizzle Cake Recipe
Ingredients: Makes one 900 g / 2 lb cake100 g/4 oz butter or margarine, softened
175 g/6 oz caster (superfine) sugar
2 eggs, lightly beaten
175 g/6 oz self-raising (self-rising) flour
60 ml/4 tbsp milk
Grated rind of 1 lemon
For the syrup:
60 ml/4 tbsp icing (confectioners') sugar, sifted
45 ml/3 tbsp lemon juice
Method:
Cream together the butter or margarine and sugar until light and fluffy. Gradually add the eggs, then the flour, milk and lemon rind and mix to a soft dropping consistency. Spoon into a greased and lined 900 g/2 lb loaf tin (pan) and bake in a preheated oven at 180°C/350°F/gas mark 4 for 45 minutes until springy to the touch.
Mix together the icing sugar and lemon juice and spoon over the cake as soon as it comes out of the oven. Leave in the tin to cool.It`s nice to be important, but its more important to be nice.

another variation and a family favourite
double the ingrediants and you can squeeze three loaf cakes out of it
Citrus Loaf Cake
100g/4oz Soft Margarine
175g/6oz Caster Sugar
175g/6oz Self Raising Flour
2 Eggs size 3 Beaten
finely grated rind of 1 lemon + 1 orange
50g /2oz Icing Sugar
Juice of half orange
Juice of half lemon
Preheat oven to 180C/350F/Gas Mark 4
Lightly grease and base line a 900g/2lb loaf tin with greased greaseproof paper.
Place the magarine,sugar,flour,eggs,lemon and orange rind in a bowl.
Beat together until soft and smooth,spoon into prepared tin and level the surface.
Bake in preheated oven for 55/60 minutes until well risen and golden and a skewer comes out clean when inserted into cake.
Meanwhile sift the icing sugar into a bowl and beat in the lemon and orange juice.
Once the cake is cooked pour the icing sugar mixture over the warm cake and leave to cool in the tin.
Optional Decoration Topping
2tbsp clear Honey
1 Orange Sliced
1 Lemon Sliced
Place the honey in a frying pan and heat for 1 minute. Add the orange and lemon slices and cook until caramelised. Cool
Remove cake from tin and place on serving board or plate, arrange the citrus slices on top in twists. Serve sliced.0 -
Hi I too love and make Lemon cake but I am looking for a very quick and easy Chocolate cake mixture .I used to have one that an Austrian friend gave me but lost it when I moved house .Sadly my pal is no longer on this earth which is a shame as she was an amazing cook.I can't seem to find one that doesn't involve a lot of faffing about . I'm not too good at beating cake mixes as I have restricted movement in my right arm so its got to be an easy-peasy one please0

Good morning.
I was wondering if anyone has a wonderful "tried and tested" Lemon Drizzle Cake recipe please?
I have googled for one but would prefer a recommendation as they are all slightly different.
Also, would I be able to make it and freeze it as I need it for Boxing Day so it would be easier if I could make it in advance?
