I !!!!! the cake all over as soon as it's out of the oven. I then sprinkle with sugar and add lemon juice.
I'll add this to the main lemon drizzle cake thread to keep all ideas together.

Lately I've modified my lemon cake....to a lime cake. Two sponges...one one I put a sugar / lime mixture. On the other goes a sort of butter icing mixture...I use less butter as I add a good dose of lime juice. My technique isn't perfect yet as its a new invention I'm trying.
Finally I put the two together. Had the thumbs up from the teenage step daughters...so can't be that bad.Baby Year 1: Oh dear...on the move

Hi Sarah I have a fabulous recipe thats really easy to make!
2 eggs
rind 1 lemon
6oz caster sugar
6oz SR flour
6oz Margerine
1teaspoon baking powder
4 tablespoons milk
Mix all the above together in 1 bowl
bake in a lined loaf tin for about 40 mins at 180C or until cooked
Topping
4oz caster sugar
juice from 1 lemon
while the cake is baking place the lemon juice and caster sugar in a bowl somewhere warm.
When the cake is cooked and still hot pour the topping over the top( I make a few holes with a fork in the top of the cake first so it sinks in)
This is a real favourite cake and I have to make it for other people too! Hope you enjoy it!;)Do what you love :happyhear0 -

Lemon Drizzle Cake
4 ozs marg
6 ozs SR flour
6 ozs caster sugar
2 eggs
4 tbsps milk
rind of 1 lemon
3 tbsps icing sugar
sprinkling of granulated sugar
Mix above well. Spoon into a greased and lined loaf tin. Make a well in the centre. Bake for 1 hour @ Gas 4.
While it's baking, mix the juice of the lemon with 3 tbsps icing sugar. When it's cooked loosen edges of cake from tin with a knife.
Spoon juice over cake, sprinkle with granulated sugar.
Leave cake in tin till cold.0 -

I need a little advice! I want to make a lemon drizzle cake for bf's birthday which is in a couple of weeks as its his favourite, but I want to decorate it, so my question is, do you think i could use a regular icing like on a christmas cake so that i can decorate the cake?0 -
I use two toppings! Gilding the lily is absolutely fine in this case. Whilst the cake is still warm I pour over a mix of juice of half a lemon, the grated lemon peel and a tablespoon or two of caster sugar. When cool I make a simple glace icing with lemon juice and icing sugar and pour over the top and allow it to run down the sides. Fantastic!0

my mum always makes the basic sponge recipe and then when out of oven does the sugar and lemon juice paste techinque. But my always uses a loaf tin which i have always found odd, don't know why but in my mind it should either be a round cake or a tray bake. Havign said that my mum does make the best lemon cake and always want more.0

Using a loaf tin means the cake is easier to cut and serve, I use loaf tins for virtually all my baking these days0

Lemon drizzle is my absolute favourite and my luck has been in, since the NY it has been just 99p at Sainsburys: http://www.mysupermarket.co.uk/Shopping/ProductDetails.aspx?Store=3&Product=18086 - offer last unil 27th Jan 09.
It is very sweet though, have ended up scraping half the icing from the top of the cake. The coffee cake (also 99p) is good too, both are great with a nice cup of tea.Value-for-money-for-me-puhleeze!
