Can't see any reason why you couldn't freeze it. Last time I made it I did something funny accidentally with the lemon and sugar mix and the cake had a really crispy top which was really good - I think if you froze it you probably wouldn't get that - but it wasn't supposed to be like that anyway I don't think !
One thing: it was so good it went in a flash - if you're going to do it why not do two ?0 -

EDIT - OK mine was very similar to the one posted above but used granulated sugar in the topping mix and lemon juice in the cake mix instead of milk.June Grocery Challenge £493.33/£500 July £/£500

I'd vote for this one, made it for a fund raiser coffee morning and there was nearly a punch-up over the last slice!

I make one that I got off the recipe index but it only uses 2 eggs. It's really delish and has become a firm favourite. Tried it with limes when they were plentiful and it was nice as well.Don't worry about the world coming to an end today. It's already tomorrow in Australia.0
