Lemon / orange drizzle cake

I'm making a lemon drizzle cake tomorrow (1st attempt!) for my son who's passed his GCSEs.
I looked at the 'push up bottom' cake tins in Tesco this morning, but they were £7.50, which I couldn't afford, so will have to use the round sandwich tins I already have, they are quite deep ones so hopefully will be big enough to hold the mixture between the two of them, but now I need a filling to hold them together. I'm thinking a butter cream would work, but haven't a clue how to make it, also, I thought I could add a little lemon juice to it, or do you think that would be too much, with the cake being lemon?
So, looking for a butter cream recipe, and should it be lemon or just plain? Thank you in advance! :T
Oh and also any tips on where to buy cake tins that are as cheap as possible would be great!0 -

HI, the basic buttercream filling is here,

you could put a squirt of lemon in, or sprinkle some dried ginger in there, that would be nice too.
Or just use some lemon curd (easy way out lol).I’m a Forum Ambassador and I support the Forum Team on the Old style MoneySaving boards.

Lemon curd all the way!!! The texture goes beautifully with butter cream.0 -
depending on the cake you're making you might not need a buttercream/filling.
i make mine as a loaf (but there's another recipe i follow which is a flatter square)m- depends on recipe.
with one i mix small amount of icing sugar/sugar and lemon juice and pour over cake which has already been sprinkled with a mix of sugar and grated lemon rind.
once when i had just made some lemon curd (and it was still warm) i poured some of it over the cake u could just heat up some normal lemon curd.
either way i skewer the cake a bit and it all soaks through a bit and makes it moist - u could then serve with any kind of cream etc x0 -
Delia does a lemon cake recipe and she uses lemon curd to glue it together, her lemon curd recipe is really easy too and it's delicious. Cake is topped with lemon glace icing.Official DFW Nerd Club - Member no: 203.0

Hello there, I am hoping somebody may be able to give me some advice to rescue my lemon drizzle cake which I made tonight. It's in the oven, already had 15 mins too long, the top is now getting burnt but the innards are not cooked. I re-read the recipe and realised I put about 20g too much butter in.
Any ideas to rescue my masterpiece will be gratefully received !0 -

Do you have a baking sheet? Put that on a shelf just above the cake, and it will help stop the top burning.:rudolf: Sheep, pigs, hens and bees on our Teesdale smallholding :rudolf:0
