This is incredibly easy to make and delicious.

The lemon curd is very easy to make, so don't be put off!

I just bake a standard sponge and then whilst its still warm mix some lemon juice with some caster sugar (nearly a paste) and plonk on the top . Something my mum did, and I've copied. you end up with the lemon soaking into the top of the cake and a hard sugar top.

I do exactly the same, and its tastes so moist and sweet but leaves your palate wanting more......I can't keep discussing food threads its making me hungry.
    I had a plan..........its here somewhere.

I make Mr BE's choc yoghurt cake - but leave out the cocoa - and add 1 tsp lemon extract and the rind of a lemon. When it's cooked and still hot, stab it all over with a skewer and pour over the juice of the lemon mixed with 3 tbsp of sugar.
