  • I believe that cholesterol needs to be below 5 to be healthy and mine came in at 6.3 - still coming to terms with that and the RA but busily trying to get a handle on the basics to start things in the right direction.

    Still don't know much about cholesterol but was amazed that dairy free / animal free products mostly (please don't quote me , I may be wrong) contain no cholesterol and realised that this is right for me at this time as animal fats, I am told, also trigger inflammation in RA.

    Made a good start today and cooked sweet potato and chick pea curry for tea tonight - even my youngest loved it - it's made me feel confident that this is the way forward.

  • Can anyone direct me toward some economical vegan ice cream recipes? I'm looking for simple recipes using coconut milk or almond milk. I've been browsing google but the recipes are all American with expensive sounding and mostly difficult to source ingredients! I want a simple chocolate, or ginger ice cream recipe. Can anyone enlighten me?

    My cholesterol level was 7.8 and the doctor put me on statins. I was really upset but took them for only 3 months as I started having pain in my legs. I went on a vegan diet, I was already vegetarian and told the doctor I had come off the statins and was now vegan. She just removed the prescription from repeat on my record.

    I have now lost 7lbs and am hoping to lose another 20 over the next year. I have never felt better. I do take a vegan supplement though.

    I don't have an ice cream recipe but love the 'swedish glace' that tesco and sainsburys sell, in fact I prefer it to non vegan ice cream.

    Simple Chocolate
    3 frozen large ripe bananas.
    2 tablespoons almond milk
    2 tablespoons cocoa powder
    1 teaspoon vanilla extract.

    Blend the cocoa powder into the almond milk. Break the bananas into chunks, place all the ingredients into a food processor or blender, process until smooth and creamy. (aim for soft scoop consistency) either serve immediately or return to freezer.

    Basic Coconut Cream ice cream
    Place 2 cans of coconut milk in the fridge overnight. Open the cans and scoop the fat from the top of the cans - I use the liquid in thai style curries.
    Freezing the fat will result in a basic coconut ice cream, however it is far better blended 50/50 with a fruit puree or adding a couple of tablespoons of dessicated coconut and swirled through with a rich chocolate sauce (recently I've used the Asda own label dark chocolate spread) for a Bounty effect ice cream.
    Sweeten the mixture to taste.

    I've been playing with a pina colada ice cream recipe using a sweetened pineapple puree and white rum - getting the alcohol quantity right is tricky as it affects the ability of the ice cream to freeze

    Thank's for the coconut ice cream recipe, will try that! I don't actually like bananas at all, even though its a clever idea!

    You could try avocado, there's a Jamie Oliver recipe here where you could substitute the whole milk with a vegan alternative.
    (I haven't tried this, but am now wondering about a pistachio ice cream to take advantage of the avocado colour)

    Not sure if it's of interest to anyone, but I noticed my local 99p store is selling vive soy milk - 2 for 99p! They seem to have the unsweetened, sweetened and cappuccino flavour. The cappuccino one is my teens favourite of all soy drinks and usually sells for £1.29 or abouts in Tesco. Hubby checked, they don't expire till next year, so not sure why then ended up in 99p store, maybe not selling in supermarkets?

    No buying unnecessary toiletries 2014. Epiphany on 4/4/14 - went into shop to buy 2 items, walked out with 17!


  • Shandyclover thanks so much for that - was going to check the £1 and 99p stores last week to see if they had anything interesting but in the end decided that they probably wouldn't stock anything. I'm off into town tomorrow anyway so I will pop along to my local one and have a look - thanks!
