Maybe you could try and add in marmite or nutritional yeast into your meal? I don't like marmite myself but if you mix it in gravy you get the fortified bits without noticing the flavour. Kale and spinach or any leafy green veg is a great source of calcium. Milk substitutes are also good sources of vitamins, each one offers a different ratio so you could check against what you want out of it, I prefer soya for baking and cooking and coconut milk for cereals and drinking. (Aldi soya is not vegan as the vit D is derived from lanolin.) Good luck :)

Lots of green veg are good for boosting iron levels.
I have been trying to follow a mostly plant based diet since January but cheese is my downfall! I tried Violife but it just isn't quite the same. I have reduced the amount of cheese I eat though so it is a start.
I was using meat subs for some quick meals but vbites maple slices gave me food poisoning last week so that put me right off them. The silver lining is that it pushed me to make even more of my meals based around vegetables instead.

I struggled with cheese too but after a few weeks the cravings went away and then when I tried vegan cheeses they were fine. I didn't like them at first but after a break from dairy they are decent substitutes. I use violife slices in sandwiches and Sainsbury's free from cheeses on pizza as it melts much better.

I'm not so keen on the v-bites stuff but I'm a sucker for Linda M sausages and the quorn vegan hot and spicy burgers! The rest of my diet is pretty plant based as I usually find any meat substitutes labelled as vegan are expensive.
