Going vegan......old style?!

  • I found this vegetarian recipe for lasagne using tofu and think if the noodles are replaced with vegan-friendly pasta, it could be a proper vegan dish. It looks very impressive, I must try it!

    I discovered a new ingredient today - bread fruit. Despite the name it's not really like a fruit, more like potato but with a slightly firmer texture. It was very good in a coconut curry with a few other bits and pieces.

    You can probably buy bread fruit fresh in some places, but this was from a tin cosing £1 from Morrisons.

    Whilst you're in that area of the supermarket, ex used to make me a scramble with ackee which is IMO a much better substitute than tofu!
  • I have finally finished reading this thread - it has taken a week, LOL. It was worth it though, because I have learnt a lot and got lots of great recipe ideas.

    I tried ackee today and have to agree with you - it's a delicious substitute for scrambled egg, as it's naturally soft and creamy and also yellow!

    I didn't even mash it up, just had it with some fried tofu pieces.

    The only downside is it's fairly pricey - £2.70 for a small tin at Sainsbury's - but I'll be having it again for sure.
