  • I found this vegetarian recipe for lasagne using tofu and think if the noodles are replaced with vegan-friendly pasta, it could be a proper vegan dish. It looks very impressive, I must try it!

    Vegen is not fun.
    Thanks for that helpful comment.

I prefer to eat vegan food when I can, and this thread gives great inspiration.

I made a totally lovely dinner this evening, sweet potato and butter bean salad. Then dropped it :(

I discovered a new ingredient today - bread fruit. Despite the name it's not really like a fruit, more like potato but with a slightly firmer texture. It was very good in a coconut curry with a few other bits and pieces.

You can probably buy bread fruit fresh in some places, but this was from a tin cosing £1 from Morrisons.

The Bounty was on a mission to collect bread fruit when they had a mutiny.

Whilst you're in that area of the supermarket, ex used to make me a scramble with ackee which is IMO a much better substitute than tofu!
  • I have finally finished reading this thread - it has taken a week, LOL. It was worth it though, because I have learnt a lot and got lots of great recipe ideas.

I found a very interesting YouTube channel, The Unnatural Vegan, with lots of useful information and well presented arguments for a vegan diet: The Unnatural Vegan

    Enjoy!

I tried ackee today and have to agree with you - it's a delicious substitute for scrambled egg, as it's naturally soft and creamy and also yellow!

I didn't even mash it up, just had it with some fried tofu pieces.

The only downside is it's fairly pricey - £2.70 for a small tin at Sainsbury's - but I'll be having it again for sure.

Thank you. Hmm, I think I will freeze it (assuming that is OK) and save it for a special occasion then.

I make a sauce with tofu, rice milk, tahini, soy sauce and maple syrup (just a tad) which is delicious over brown rice and veggies.
