    We have a Jordanian cafe not far from us, one day we had lovely flavorful broad beans there served as a mezze. I tried to duplicate them at home as my vegan daughters liked them so much - this is the closest recipe I found.

    Oooh that looks lovely. Will have to give it a go when I next find broad beans. Looks like it might work well with butter beans as well...mmm....
    I'm a huge fan of beans. Filling, tasty, full of fibre and nutrients and cheaper than chips. Have three pots simmering away in the kitchen at the moment to keep us going for the week :)

  • Hi All,

    I just wanted to share with you a delicious recipe for "No-chicken broth powder" that I got out of The Happy Herbivore Cookbook. It tastes so authentic and it would be rude not to share. so...

    No-Chicken Broth Powder

    1 ⅓ c nutritional yeast
    2 tbsp granulated onion powder
    1 tbsp granulated garlic powder
    1 tsp dried thyme
    1 tsp rubbed sage (not powdered)
    1 tsp paprika
    ½ tsp turmeric
    ¼ tsp celery seed
    ¼ tsp dried parsley

    You simply combine all the ingredients and store in an airtight container. It does say to grind in a mortar and pestle but seeing as I don't have one yet I just shook it all up and it tasted delicious.

    I decided to really get stuck into batch baking yesterday and made up a big pan of "chicken" stew and dumplings. I used quorn pieces even though I see it has egg white in it but I'm fairly new to being vegan and right now I haven't quite got my act together so am allowing it.

    I was going to post a pic of my stew but it won't let me because I'm a new user. That'll teach me to be a lurker for the last 4 years or more lol

    Let me start by saying that i am not Vegan, or even a vegetarian. I am just interested in eating a more 'clean' diet.

    I am trying to find yummy vegetarian and preferably vegan, meals for me and my children.
    Does anyone have some tried and tested recipes they care to share with me?

    I am thinking about trying out a week of being 100% vegan, at some point in the future, so would like to get to know the basics first.

    And most importantly (for me), how hard/easy is it to be a vegan, on a budget?

    I was in a cafe this morning to celebrate a friend's daughter's birthday. I only had a pot of tea because they don't do anything vegan. However just before I left the owner asked my advice. He's having a couple of visitors over soon from a well-known national newspaper (I don't know if it's just that they're friends of his or are doing a review). They're vegan, and he asked my advice on what he could offer in the way of a hearty cooked breakfast. Apart from tomatoes, mushroom, baked beans, toast and vegan sausage I couldn't think (and they might not be the sort who like meat substitutes anyway). I don't usually have breakfast, and if I do it will be weetabix or toast. What sort of things can I suggest he offers?

    I also said I'd give him my vegan cake recipe as of course it's suitable for anyone with milk or egg allergies. He said he'd like to try and offer that on his normal menu.

    There are commercial potato waffles (Birds Eye) and hash browns (McCains)which are vegan. Fried bread (assuming its not cooked in fat that's used for cooking animal products). Vegan pancakes are fairly easy to make.

    Hopefully next time you're there, there'll be a range of suitable foods to choose from.

    Good idea, I'll suggest those to him.

    He did seem to want to offer a greater range to more people, so good on him.
  • Just thought I would post a link of something I tried yesterday. We had friends over, hubs made vegetarian thai green curry and I wanted to make a pud that vegan daughters could eat as well as guests. I bought tinned pineapple, mango and lychees, and whipped coconut cream. Turned out delish, though I did not manage to get the coconut cream to whip into peaks like the recipe said as I did not have time to chill it overnight. From my experience Home Bargains is the cheapest place to buy coconut milk - 59p a can, found near the baking section, right now they are also selling coconut milk powder, 49p a packet, though it does have milk protein listed in the ingredients. Anyways here's the recipe for how to whip coconut cream...

    I just thought I'd post a delicious cake I made today. I adapted it from a ginger cake recipe and it's worked out fine.

    Marmalade Cake

    7 oz margarine
    3 oz sugar (I used light brown)
    10 oz marmalade (I made quite a lot a while ago which was too runny, so it was perfect for this!)
    Cream these three ingredients together.

    12 oz plain flour
    1 1/2 tsp bicarb

    Sieve these in

    7 fl oz soya milk
    1 1/2 tbs of either vinegar (or lemon juice or orange juice to match your marmalade flavour)
    2 tsp orange or lemon essence if you want a bit of extra zing

    Mix these together then pour into the cake mixture. Mix well and pour into a greased and lined 10" x 8" cake tin. Bake @ 180c for about 40 minutes.
