    Hi mardatha,

Yes it would be fine to make and freeze quiche.

This thread might give you more ideas on using them up:

    Eggs eggs and more eggs!

And this thread has advice on freezing the eggs themselves:

    freezing eggs?

I'll add your thread to the first link once you've had more replies.

I would make quiches, muffins, cakes, pancakes, pastry dough (with yolks), merigues (with whites) etc and freeze.

    ok thank you but.

I went to start making quiche - I also have tons of tomatoes so that would be easy - but then I realised we cant eat pastry, so would need to make the quiche without it. That's fine, but then I realised I only have Pyrex dishes to make it in !! I cant freeze them !! - Any ideas please ?

have you got any old marg or ice cream tubs, tupperware or anything like that hon ? I often freeze eggs to use at a later date for cakes or quiches etc. I just whisk them up a little first then freeze and label how many are in there. They look a bit gloopy when thawed but work fine for quiche, omlettes and cakes :D

Can you make the pastry-less ones in muffin tins- well greased with olive or similar oil ?
Sorry my other suggestions were duff- did not realise there was a sugar issue :(
