I would batch bake pastry, cakes etc and then freeze or take some into work (cakes that is not the eggs!!)
do you like omelette have that for dinner couple of times
like others have said unless pregnant using eggs past the date on them is generally fine they tend to last - eggs dont come out a chicken with a date on them!!0 -
Do the glass of water test, if it floats its off, if it sinks but is slightly stood up use in cakes or when it will be fully cooked through, if it lies completely flat its fine for any use.
Definately bake and freeze though, works well with cakes.

Hi, I would freeze them. Break them out of their shells, pierce the yolks once and put in a bag. I freeze them in batches of two or four. It has worked perfectly for me. I use the defrosted eggs for baking.

Last night I fell over my step whilst carrying a bag of shopping in one hand and a tray of 18 eggs in the other hand
Needless to say most of the eggs are cracked/broken, (the ones that werent all over the floor, urgh!) but i dont want to just bin them, there surely must be something i can do with them.
Poached eggs for breakfast for a start
but what about the rest? if i whisk them for scrambled egg or omelettes and leave them in the fridge how long will they last?
Id love to have a go at making mayo but every time i've tried it curdles, so thats out.
any ideas?
