Thanks again for all the advice. I ended up boiling and eating two with toast (shoved the frozen HM lasagne which was supposed to be tonight's dinner back in the freezer). The whites did spill out a little while boiling, it was quite funny. The other two aren't cracked as badly - really just hairline cracks. So I am keeping those and will scramble them for breakfast tomorrow with some low fat cream cheese. Yummers!

Hi
I bought some eggs on my internet shopping at what seemed a good price. When I got them delivered I expected 12 but their were 30 !!.
I already have 6 eggs in the fridge and the sell buy dates are 15th february and the 23rd .
I stay alone altough my b/f visits at wknds and I had bought the eggs in for him and for cake making.
Im not very keen on eggs themsleves ie. scrambled eggs. So I will need to use them up in recipes etc. I have a lovely reciepe for chocolate brownies that uses 4 eggs but that still leaves me with 32 ! .
Can anyone suggest any recipes to use them up -even making food I can freeze .
Many many thanks x0 -
First, they won't suddenly go off after their use by date. They'll probably be fine to bake with.
Second, why did you accept them if they weren't what you ordered? You aren't obliged to take them if it was the supermarket's fault
Is there a neighbour or colleague who would buy them from you?0 -
If all else fails, freeze your eggs with one of these methods and use them at your leisure:

Eggs keep for ages - I've used them weeks and even months after the date printed on the pack, without any problems.0

Quiches, cakes, cookies etc. and then freeze the cooked baked goods.
You can add beaten egg to sauces for lasagna and moussaka.
Make Lemon curd.
