    The other day I bought loads of eggs that were reduced to 10p per box from work. They have a use-by date of the 20th so instead of eating nothing but omelette until then I thought I would do some batch cooking. Anyone got any suggestions for good recipes that use eggs that will freeze well?

    well most obvious one springs to mind is

    homemade pastry frozen

    quiches

    use pastry to make pasties or sausage rolls.

    not sure if you can freeze omlette think you can freeze a batter mix.
    better still make a load of yorkies or toad in hole.

    Hi Claire Bear,

    Things I can think of, off the top of my head are:

    Quiche
    Pancakes
    Fritatta
    Cakes and muffins
    Use the whites to make meringues and the yolks to make carbonara.

    The chances are that your eggs will be perfectly safe to eat well past their sell by date anyway, this Fresh Egg Test should help. Also this thread has more opinions: Dates on eggs / how long do they keep for?

    If you want to you can freeze the eggs themselves for using later in baking:

    Thanks for the suggestions, pancakes and quiches are a good idea. I also didn't realise you could make omelettes and freeze them so will do that too. I could probably eat them all before they go off but am taking having a lot of them as an opportunity to stock my freezer up a bit. I already have brownies on the list of things to make, but they won't last long enough to go into the freezer ;)

    On a very tight budget for our food shopping, I have 6 eggs and some mushrooms to use for tea tonight, any ideas of things to make with that, apart from the obvious omelette? We are veggie so no meat ideas please. Thank you! :)

    You could make a quiche or fry the mushrooms and a few eggs and put the mushrooms on some toast, with an egg on top.

    Sorry, I'm here now, yep have bread, potatoes, and usual store cupboard stuff, but no flour. Sorry should have made that clearer, oh and milk also, and a few Tesco value cheese slices.
