If you get a yorkshire pudding tin, put a slice of courgette in the bottom, then a slice of mushroom, chopped pepper (anything thing you got lying about really) top it up with beaten egg, shove a bit of grated cheese on top, then put in the oven till it's cooked!!these are yummy and make lovely canape style snack for new years eve.

I'm not a fussy eater and would try just about anything once... but pickled eggs - just the idea of it makes me queasy.
Eeck! On a Christmas doo in Worcester I was told that a pickled egg in a bag of salt and vinegar crisps with Worcester sauce poured in was a local delicacy. Obviously having had a few that night and being *up for anything*, I gave it a try. I cant actually remember if I liked it, although I've never tried it again since. Probably because the next day I had the hang over from hell and spent some time yelling at the toilet bowl. And I must say this Worcester delicacy definately tasted a lot nicer going in that it did coming out again.
PS. Sorry! :embarasseSIMPLE SIMON - Met a pie man going to the fair. Said Simple Simon to the pie man, "What have you got there?" Said the pie man unto Simon, "Pies, you simpleton!"0 -

You could make omelette and use it as a Pizza Base or check here out

Do some baking to freeze (assuming you have flour, sugar and baking fat of some kind in the house)
Baked custard, then make some meringues with the whites to store (or make a fruit meringue pie to eat now!)
Tiramisu for the freezer (my recipe uses about 8 eggs!)0 -
Make some Crustless Quiches, they are pretty much a staple in my house i use them to get rid of any meat / veg that need using up.
Just throw a bunch of veg and/or meats into a small quiche dish or other oven proof dish, add some mixed eggs, top with cheese and cook for 30-40mins.
The quiches can then be sliced up and frozen or used with a salad/jacket potato for a healthy meal, or like in my house used as snacks, kids love them and i'd rather they ate that instead of biscuits and crisps.0
