You can freeze them, take them out of the shells, put 4 to 6 is a freezer bag, and freeze, take out one bag when cooking or baking.

I may be wrong, but I have a feeling you can freeze eggs. I think you separate them into whites and yolks and I think you have to whisk each lot separately before you freeze them. You could do them in relatively small batches and then have lots of lovely ice cream/meringues/scrambled eggs when you feel like it. Don't anyone shout at me if I'm wrong!!!0

Ohh some good suggestions here, thanks. As I live alone in a small flat, I do not have space nor much use for a freezer, so only have the fridge's ice compartment, but there is some space in there for freezing a few eggs as suggested. The rest will have to remain in the normal section of the fridge.
I'm making a nice omelette tonight just to get going... :drool:

You don't have to seperate the whites and yolks, just mix them together before freezing.0 -
Do you have a homeless shelter/soup kitchen near you that could use them? I'm sure they'd be grateful...0

Hard boiled eggs work best when the eggs are one-two weeks old: the older they get, the more air collects inside the egg and so the shells are much easier to peel off. You can hard boil eggs and keep them unpeeled in the fridge for around a week so wait until the 12th before hardboiling and then they'll last an extra week. As for what to cook, the options are endless. Pancakes, HM custard, soufles, scrambled eggs, eggs benedict, mimosa soup, merangues, cakes.....0
