    Finding new ways to store eggs won't get at the root cause of the problem.
    You are producing too many eggs.

    How about selling the eggs at work, or at school.
    I pay 75 for 6 eggs sold at the gate, not always guaranteed to have eggs for sale, just depends upon how many the people have used themselves, or how many have been laid.
    I live in Lancashire, on the Fylde coast if you happen to anywhere near me, I would buy some. :happyhear

    I've previously made this Australian Women's Weekly recipe - they call it Impossible Pie:

    1/3 cup plain flour
    1 ½ cups milk
    3 eggs
    2 bacon rashers, chopped
    3 Shallots, chopped
    1 cup grated cheddar cheese
    130g can corn kernels, rinsed, drained
    2 tablespoons chopped fresh parsley

    Fry bacon until browned, place bacon into a sieve and allow to drain

    Oil shallow 23cm round flan dish. Whisk flour and milk in medium bowl until smooth; whisk in eggs.

    Stir in remaining ingredients; pour mixture into prepared dish. Bake in moderately slow oven about 1 hour or until set.

    I'm intolerant of wheat, citrus, grapes, grape products and dried vine fruits, tomato, and beetroot, and I am also somewhat caffeine sensitive.

    :eek: :eek: :eek: :eek: :eek: :eek: :eek: :eek: :eek: :eek: Not a great suggestion, IMHO :o Egg layers are usually different breeds from table birds, so tend not to be so good for meat. When we have surplus eggs, I have lots of friends who are delighted to take a dozen off my hands :T

    That looks like a lovely and easy :T :j recipe. I've seen it mentioned before, but not seen a recipe. Any idea why it's *impossible* :confused:

    I have recipe that is useful.... can be eaten hot or cold, good for a picnic. You can leave some ingredients out if you don't have them or are vegi, use less rich things if you don't have cream (though of course if you have cream to use up - perfect!)

    Cheese and Bacon slice

    1tsp oil
    3 oz streaky bacon (optional)
    8oz finely chopped onions. Fry the above together
    spread 10 slices day old white bread with 2 1/2 oz softened butter.
    Line a 10" (NOT LOOSE BOTTOMED!!!) tin with half of bread cut into triangles.
    Sprinkle with bacon/onion mix.
    Sprinkle with 2oz strong cheddar grated. Top with remaining bread.

    3 large eggs beaten with...
    1/4 pt single cream
    3tbsp greek yoghurt
    4 floz milk
    1/4 tsp paprika
    1/4 tsp chilli powder
    1 tsp dry mustard
    Salt and freshly ground black pepper

    Pour the above over bread etc and sprinkle top with 2oz strong cheddar grated.

    Allow to chill for one hour and bake for 1 hour. Gas 3 325F 160C

    NOTES
    • You can use cooked chopped ham if you like. Lots of other things you could use instead. Might be nice with left over salmon OR tuna on a budget (maybe with sweetcorn)!
    • If you have leeks or spring onions these would be OK. garlic if you like it?
    • Mushrooms /sweetcorn if left over?
    • Use spread of choice instead of butter.
    • Bread or cheese that is available... blue cheese in with plain would be tasty... again, good for left overs. Keep the neatest looking pieces of bread for the top layer.
    • Can use milk, cream yoghurt or what is available. Egg will set it any way.
    • Can vary spices or just use salt and pepper. Mixed herbs?

    Pancakes alwys use up eggs. A few ideas rather than the usual sweet crepe style:

    You could also try making real lemon or tangerine curd (uses a lot of yolks).

    I would think it's because there is no pastry and it's called a pie.....impossible to have a pie without pastry.:D

    I have a recipe for a pasta thing that uses up eggs.
    Cook a packet of Pasta 'n' Sauce, any flavour.....let it cool, but not stone cold. Put it into a flan dish, beat 2 or 3 eggs and mix with the pasta, bkae in oven until set.
    Not tried it myself, but it's meant to be good.

    For info I am in Suffolk so miles away from any of you lot!

    My husband did used to take them to work but he has been off sick for a while so we appear to be inundated.

    Anyway I have managed to use 10 tonight, I have made 36 fairy cakes and a pastryless quiche. It has just come out of the oven so I will let you know how it tastes.

    I am vegetarian so wouldn't dream of eating my chickens and as someone above said egg layers are different to meat chickens.

    I thought chickens laid less in the winter but ours have just carried on as normal.
