Does anyone have any ideas for using up 21 eggs. I live alone, but have pupils who keep chickens! I always have lots of eggs, but never as many as 21 in one go!

If you have too many to use up you can freeze them for using later in baking etc. They need to be taken out of their shells first.
There's an older thread with lots of suggestions on how to use up eggs that should help so I've merged your thread with it to keep all the replies together.

Hi All,
(I searched for a thread on using up eggs but didn't find one, if I've missed it please put me where I belong)
I have a minor egg dilema. I had 8 eggs in the fridge, and 6 more came with my veg box on Thursday, and I'm going away on Friday for a week with work.
How can I use up the eggs? Can they be frozen even? I don't like eggs on their own, so they need to be "in things". Will the other 1/2 dozen last til I get back?
There's just me at home this week, so a big quiche wouldn't really work, cos that was my first thought.
Any suggestions would be gratefully received!

Don't think you can freeze eggs, or if you can, they have to be broken first?
I used my last of October's eggs on Sunday making a cake. The best before date was 25th October and they were fine! I just didn't tell bf about the date cos he wouldn't have eaten the cake then.Pink Sproglettes born 2008 and 2010

Can you not make the quiche... cut it into portions ... then freeze it ??

I think you can freeze eggs, Just take out or shell first, freeze them in two's or threes, then use when you get back.
