    Make quiches to freeze. Cook the pastry base blind and the put the egg mix in. Freeze it with the egg mix raw (make sure the pastry is well sealed) and when you want to eat it put it in the oven frozen. It will thaw and cook so you don't get rubbery filling from heating twice.

    Yorkshire puds (these freeze well (cooked) so can make a big batch for another time) Just heat from frozen.

    Pancakes apparently freeze well. Never last long enough to try though!
    I like savoury pancakes with chicken and leek and sauce in. Yum.

    Thanks for all these ideas, going to look for recipes tonight, especially quiche and the nigella choc mousse cake :)

    Pastryless quiche!

    Whisk up a load of eggs ( I usually end up using 12 - big quiche dish, prob something like 28cm diam)

    Add some milk, season to taste with salt and pepper

    Chuck in some chopped cooked meat of your choice, gammon, ham, chicken

    And/or just peppers, chives, finely chopped onions and a very finely chopped and de-seeded chilli pepper, just the "flowers" of broccoli, some spinach, whatever you have in your fridge at the time.

    Put in oven (about 180°C) until it is cooked through - easy to check with cocktail stick. Usually takes about 30 - 45 mins for mine. Yum!

    Great for using up eggs, and leftovers at the same time! Freezes exceptionally well, just reheat. Or keeps in fridge for a few days and just eat cold with salad and/or chips, boiled new potatoes.... the options really are endless!

    I've made sponge cake and frozen it to use up eggs. Not exactly perfect as a cake but fine for use in trifles, tiramisu, or smothered with custard and jam as a comfort snack :)

    get shallow, round sandwich tins and make a huge batch of 'giant' yorkshire puddings, freeze them and get them out and fill with yummy things as you need them!

    the title says it all really!
    i have about a dozen eggs that need using up, i am trying to be good so will prob stick to savory recipes.
    any ideas?

    Loads you can do with eggs: omlettes, scotch eggs, egg mayonnaise, quiche, egg custard pies, boiled eggs and soldiers, meringue, pancakes etc etc etc...happy cooking
  • fry one or two potatoes, cubed, in olive oil and drain. Beat a dozen eggs in a bowl, add a little salt & the fried potatoes, mix and return to the hot oil in frying pan, turn heat right down. When almost firm on top, slide onto a dinner plate and flip it over - whoops - and cook the other side. When firm all the way through, allow to cool on a dinner plate, cut wedges like a cake and serve with salad, whatever, keeps in fridge for days
