    How about just soft boiled, all mushed up in a cup with a little butter, my kids love to just eat it like that with a teaspoon. Or make pancakes. Or just scrambled with whatever you have, crackers? Pita bread?

    first of all the use by date son eggs are more of a guideline... here's how to tell if they are edible...

    Get a bowl of water - gently place egg in water:
    if it floats - it's off! (Air forms in the egg when it goes off and this makes it float)
    if it stands on end but it's not floating - ie touching the bottom of the bowl - then it's ok to eat, but eat it soon! the air is starting to form which is why the thin end is standing up :)
    It lies flat on the bottom - it very fresh :)

    of course if they are cooked then it's a different kettle of fish ;)

    I know it's not exactly a real dinner but that's what I always have when I have eggs to use up...

    if you cant think of anything, you can freeze them - I usually break them into a tupperware, beat with a little milk then stick in the freezer. i use them later for egg fried rice ( do they like that?) or in pancakes/ cakes/ buns etc

    have you got potatoes? You could make potato cakes of wedges with fried egg & beans type thing?

    wow thanks for all your replies, and never knew how to test eggs for freshness like that amazing!!

    have decided that will do eggfried rice and pancakes for after!! yummy!

    Souffle, Scrambled egg and cheese, boiled eggs in cheese sauce or pasta sauce, poached on mashed spud, fried with saute potatoes (Germans have this for breakfast sometime), japanese omelette (it's sweetened and rolled up - kids love it)http://www.mrbreakfast.com/superdisplay.asp?recipeid=964 (miss out the fish cake and hanpen - kids won't like it )
