Well, I bought eggs as I thought I missed my F&V lady, nope she'd left my 30 eggs delivery with a neighbour who I haddn't seen. I did have 50, used 2 tonight making HM burgers for the barbeque.
Any ideas what to do with the rest ? Some have use by date as 7th of May, would hate to waste them as I have been bad last month for wasting.
TIAOne day I might be more organised...........

No amazing recipe ideas spring to mind, but a tip if you decide to make any of them into omlettes. This works with both plain ones and the ones with "things" in. Either when the oil is hot or the "things" have finished frying, add the egg mixture and then turn the heat down really (and I mean really) low and leave it to its own devices for 10 minutes. Yes, 10 minutes. Do not poke it about with the spatula. Part way through, get the grille going and, at the end of the 10 minutes, finish them off under it. Even on my trusty, old, worn out "non-stick" pan, they do not stick!
PS. A thought for any really leftover ones - hard boil and pickle them!The acquisition of wealth is no longer the driving force in my life.0 -
Mmm, I love eggs and I have none. Its better to share you know! (used to say that when I was younger!)
I don't do much cooking but I can come up with a couple of ideas.
Pancakes, fairy cakes, any cakes. Can you tell I like cakes?
Omelette, plain or Spanish.
Potato and egg curry.
Egg fried rice, make a batch up and freeze for another time to use up the eggs that are near their date.
Foo yung, could be chicken foo yung or pork or mixed meat like they do at the Chinese.0 -
