They freeze well tooJust do them in useable stack sizes.

I always ignore the best before date on eggs because I store mine in the fridge (apparently some people dont). Then I use the sink or float test. Some of my eggs are two weeks, if not more, after their best before date and I still use them!!Pink Sproglettes born 2008 and 2010

How about making your Christmas Cake - you'd then have plenty of time for it to mature or to 'feed' it with your favourite alcohol. Cakes kept for a few months are SO much nicer.
Personnaly, I hate quiche that has been frozen - it changes the texture of the filling and spoils a lovely dish.0 -

Scramble them with some peppers, onions and tomatoes. Put them in a pitta bread and add some KETCHUP!!! (Add chilli sauce too if like me you like it spicy)0

Hiya
I have loads of eggs I need to use up. Probably have about 16 in total of which 10 need using up in the next few days.
Just to make things extra difficult I had weightloss surgery a few years ago and my portion sizes need to be pretty small. Husb still eats his fair share but it means leftovers have to be freezable or at least ok for the next day.... as there tends to be leftovers quite often no matter how hard I try....
Any ideas most welcome0 -
omelettes use a lot of eggs and are tasty tooWe don't need to do it perfectly - good enough is exactly that GOOD ENOUGH.0
