Gosh yes, we're going through an omelette phase at the moment. Lots of black pepper and a bit of chopped ham/grated cheese :drool:.
Scrambled eggs, Spanish omelette (with cubes spuds, onion, peppers) French toast.Just run, run and keep on running!0 -

I bought a tray of 30 eggs last weekend and have only used 8, I need 8 for a cake this week, which leave 14 eggs - anyone know what I can do with them besides omlette?
I'm in on my own tonight so omelette is the way to do, but just wondering if anyone has any better ideas?

hhmm, not a bad idea! I have LOADS of flour and sugar also. I'll have a hunt around for recipes!

Thank you, I never thought about doing pickled eggs - OH loves them and I recently bought a couple of them kilner jars to make pickled onions for xmas - I can make eggs too now! Does anyone know if I can use any vinegar or does it have to be special pickeling vinegar?
Gonna also make biscuits and pancakes for later!

I get this all the time, as I keep chickens and ducks (ONLY 3+4, but v. productive), so constantly thinking what to do with all these eggs. Quiches are good, or cakes, or sponge flan cases if you have the right tin - my latest one cost £7, which is a lot, but lots of potential fillings and puddings! All these you can freeze. However, frittatas are yum and can use up other leftovers etc as well, or lemon curd if you are feeling adventurous! Or scrambled egg with or without smoked salmon?0

Normally you would use pickling vinegar. There's a recipe to add all the various spices in the link below:-
